【印度Coorg香辣鸡块】Coorg Chicken Masala



Coorg有个别称叫做印度的苏格兰,位于印度南部的高原地带,那里最出名的就是遍地的咖啡园,咖啡园里种了一些橙树,依着橙树又种了很多贵重的香料,如胡椒和香草(vanilla)等。

我曾经在咖啡花开的时候带父母去Coorg那里小住了几天,住的是咖啡园里的一个小旅馆。夜晚在依山而建的小旅馆的的露台上闻着习习凉风吹来的咖啡花香,喝着现磨咖啡豆冲泡的咖啡,吃着山里独有的美食,很是惬意。

Coorg的天然资源丰富,住在那里的人们生活一直都很富足悠闲,房子都装潢得很漂亮很有风格。他们热爱狩猎,嗜酒肉,尤其喜爱吃猪肉,这在大多数人茹素的印度,是个比较特殊的存在。

Coorg菜系喜欢用醋入菜,可能是因为Coorgee自己酿酒也酿醋的关系。我今天做的这个Coorgee masala Chicken,做法简单,味道美味,有兴趣的朋友可以试试喔!

Coorg is also sometimes referred as the Scotland of India, it is located at the hilly area of southern India. Coorg is also very famous with its coffee farms -- also the home to many fruit trees and precious spices such as vanilla and black peppers.

I have visited a coffee farm with a small hotel years back in Coorg with my parents. The memory of sitting on the balcony of the small hotel and sipping coffee brewed from freshly grounded coffee beans while the cool breeze at night brings us the sweet smell of the coffee blossoms is one of the best memories I have for India.

The Coorgee cuisine is also very unique and interesting, due to abundant ingredients and spices available in the area. 

This Chicken Masala that I made today is one of the dishes I had in Coorg, the tartness of vinegar gives very unique flavor to the chicken and making it very appetizing.



材料: 
2 磅 鸡肉切块
一只 洋葱
4-5瓣 蒜米
一小块 
4-5只 朝天椒 (不能吃辣的可以减半)
1 小勺 辣椒粉 
1 小勺 孜然粉 
1/2 小勺 黑胡椒粉 
1 大勺 白醋 
1/2 小勺 盐 
2 大勺 油 

Ingredients:
2-3 lbs of chicken thigh/ wings (chopped into 1 inche pieces)
1 Medium onion
4-5 cloves of garlic
1 inch of ginger
4-5 green chilies (cut into half if you like lesser heat)
1 tsp Chili powder
1 tsp Cumin powder
1/2 tsp Pepper powder (Black or white)
1 tbsp apple cider/lime juice/lemon juice/vinegar
1/2 tsp salt
2 tbsp Oil




1. 把所有的材料包括盐(除了油)加大约1/4杯的水搅拌成糊.

2. 把鸡肉洗净切块后加入搅拌好的香料糊腌上2-3个小时,能放冰箱腌过夜更好。

3. 在一口锅里加入2大勺食油,把腌好的鸡肉倒入翻炒至变色后加盖小火焖35-45分钟至鸡肉软熟即可。

1. Blend together all the ingredients listed (spare the oil and of course the chicken) with 1/4 cup of water into a paste.

2. Clean and cut chicken into small pieces. Add the paste to the chicken and marinate the chicken for about 2-3 hours, overnight will be better.

3. Heat 2 tbsp of oil in a cookware, add the chicken with marinade and cook at medium--low flame for about 30-45 minutes until the chicken is tender.

Serve warm with rice or Bread.
