Mathri/Mathari (Indian Salted Cracker) 【印度香辣脆饼】

This Salted Cracker is a very famour Rajasthani snack, one of my favourites when I visited my parents in law. This recipe was modified according to my liking, and it turn out very well.

Ingredients:
1 cup  Whole wheat flour (atta)
1 cup All purpose Flour (maida)
1/2 cup Semolina Flour (suji)
1/4 tsp baking powder
1/2 tbsp chili powder (optional)
1 tsp Caraway (Ajwain)
1 tbsp Cummin Seed (Jeera)
1/8 tsp Black pepper powder
4 tsbp  Butter/Ghee
1-1.5 tsp  Salt
10-12 tbsp Luke Warm Water

Here are the ingredients:

Knead together all ingredients in a mixer into a slightly firm dough, and leave it aside for about 20 minutes.

Divide the dough into slightly smaller than Pingpong ball size and roll it out, use a fork to poke the rolled out dough to prevent puffiness while frying.

Heat up 2 inches of oil at medium to higher heat, deep fried the cracker until it turn golden brown, and drain out oil, let cold, and the cracker is ready!

The Indian like to have this with some pickle, and I preferred just as it is.

Serve with a cuppa piping hot Masala ChaiIts simply perfect!
