这个蛋包饭是马来西亚小食摊相当有名的一道饭食,和美极辣椒酱一起吃很美味。
它其实就是简单的炒饭用蛋饼包上了,卖相马上就特别不一样啦!
This fried rice dish is a very common dish one could find in almost all of the Malay food stalls in Malaysia.It is basically fried rice wrapped in thin omelets, a very elegant presentation that brought this simple dish to a complete new level!
材料:
1
碗
隔夜饭 (泰国香米饭最好)
鸡肉/香肠/虾仁 (切丝/切丁)
1/3 杯 冷冻豌豆和玉米 (或任何你喜欢的蔬菜)
1/4
只
洋葱切碎
1-2 只鸡蛋加绿豆大的粟米粉,一点盐稍微打散 (看鸡蛋的大小而定)
注:炒饭材料和调味可以随意
调味:
鱼露或酱油 适量
胡椒粉 适量
盐
适量
麻油 几滴
Ingredients:
1 bowl of leftover rice (Jasmine rice is the best for this dish)
Sliced chicken/sausage/shrimp (sliced or cubed)
1/3 cup of frozen sweet peas and corn (Or any vegetables of your choice)
1/4 Bombay onion (chopped)
1-2 eggs, depending on the size, add a pinch of cornstarch and some salt, lightly beaten
Note: You could basically use any ingredients you liked for the fried rice
Seasoning:
Soy sauce to taste
A pinch of pepper powder
A pinch of salt
Few drops of sesame oil
1. 先准备蛋饼,热上一口8-10寸的平底锅,抹上一层薄薄的油,然后把打散的鸡蛋倒入,扩散均匀.中火,加盖烘至定型,熄火,拿出蛋饼,放到一个稍微凹陷的盘子上。
1. In 8-10 inches cooking pan, spray or evenly spread a thin layer of oil. Pour in lightly beaten egg, spread evenly and cover with lid, cook at medium heat, cook until the egg sets its shape. Take the omelets out and place it over a plate.
2. 锅里先把洋葱加点油炒香,然后加入虾仁/鸡肉/香肠翻炒出香味,加入白米饭翻炒至火候足后,加入鱼露/或酱油调味,加入冷冻豌豆和玉米,翻匀至熟,起锅前洒入胡椒粉和麻油增添香气.
3. 用个碗把炒饭盛起,倒扣到蛋饼上,折起蛋饼把米饭包好,反扣到一个盘子里.加上辣椒酱/番茄酱和葱花装饰.
2. Heat up about 1 tbsp of oil in a wok, stir fry onion and sausage until fragrant, add cold rice and keep stirring until rice loosen.
3. Season with fish sauce or soy sauce, now add frozen peas and corn, turn well until the corn and peas are cooked and crisp, sprinkle some pepper powder and a few drops of sesame oil before serving.
4. Place fried rice in a bowl, and cover the rice bowl over the omelette, remove the bowl and wrap the omelette to form a square shape, turn the wrap around and place it over another plate to form a pocket. Garnish with chili/tomato sauce and some chopped spring onion.
3. Season with fish sauce or soy sauce, now add frozen peas and corn, turn well until the corn and peas are cooked and crisp, sprinkle some pepper powder and a few drops of sesame oil before serving.
4. Place fried rice in a bowl, and cover the rice bowl over the omelette, remove the bowl and wrap the omelette to form a square shape, turn the wrap around and place it over another plate to form a pocket. Garnish with chili/tomato sauce and some chopped spring onion.
