【印度小锅咖喱鸡】Karahi Chicken (Karahi Murgh)

Karahi在印巴语里就是镬或者铸铁锅的意思,所以Karahi Murgh就字面解释,就有点类似干锅鸡的意思。这道菜汤汁比一般的咖喱菜少,非常浓郁好吃。


A good friend moved out of the country and left me with a big box of spices, one of them being this Karahi Chicken Masala, it has been a long time that I made a chicken dish, thus I decided to make this tasty Karahi Masala Chicken over the weekends!!

And it turned out to be Superb!

600 克 鸡肉 (切块)
1 小勺 姜蒜蓉
1 大勺 姜丝

3 只 中型番茄
3-4 只 辣椒 (不嗜辣可以用不太辣的辣椒代替)
1/2 只 中型洋葱

2 大勺 市售 Karahi Chicken 香料
盐适量 (大约 1 小勺)

1 小勺 孜然粉 (Cumin Powder)
1 小勺 芫荽粉 (Coriander Powder)
1/4 小勺 姜黄/黄姜粉 (Turmeric Powder)
1/4 小勺 Garam Masala
盐适量 (大约 1 小勺)

600 gm of Chicken Thigh (Cut into 1x1 inch)
1 tsp Ginger Garlic Paste
1 tbsp Shredded Ginger
Some chopped Cilantro for garnishing

Blend below ingredients WITHOUT water into a paste:
3 Medium Size tomato
3-4 Green Chili (Use less spicy one if you can't take much heat)
1/2 Medium Size Onion

2 tbsp  Karahi Chicken Masala
Salt to taste (around 1 tsp)

1 tsp Cumin Powder
1 tsp Coriander Powder
1/4 tsp Turmeric Powder
1/4 tsp Garam Masala
Salt to taste (around 1 tsp)

1. 首先把鸡肉切成麻将大小的块状,热上一口锅子,加一点点的油,把鸡肉块和姜蒜蓉倒入干煸至鸡块有点焦香。

2. 煸鸡肉块的同时把番茄辣椒和洋葱搅拌成糊状。

3. 把调味料/香料粉除了盐加入煸香,然后把番茄糊倒入,加盐中小火煮至浓稠,大约20-25分钟。

4. 吃的时候撒点姜丝和芫荽装饰。

1. Heat up a cooking pan and grease with about 1 tsp of cooking oil, cook the chicken pieces and ginger garlic paste until the chicken is slightly brown.

2. Meanwhile, blend together tomato, chili and onion into a paste.

3. Add the Karahi Chicken Masala OR all the spices listed at the second part (Beside salt), when the smell of spices started coming out, add the blended tomato onion paste, and cook at medium to low flame for 20-25 minutes, season with salt and when the sauce thickened. It is done.

4. Sprinkle some shredded ginger and chopped Cilantro before serving。

It goes very well with Naan or any kind of rice!
