I used to get 40 Cents for pocket money everyday when I attended primary school, back then 40 cents is good enough for a kid to buy morning snacks and some tidbits. One of my favorite snacks to buy during school days is this one...Cucur Pisang, a Malaysian version of Banana fritter.
4-5 Ripe banana (It has to be ripe)
1 Cup rice flour
2/3 Cup All purpose flour/Whole wheat flour （another 1/4 cup to spare to adjust the consistency of batter）
1/3 Cup of brown/white sugar
1/2 tsp salt
1 tsp Baking Powder
Peel and mashed banana.Stir in all other ingredient, and blend well, the consistency of batter should be thicker than pancake batter, but slightly runnier than muffin batter. Adjust accordingly using whole purpose flour.
Left the batter rest for about 10 minutes.
Heat up 2-3 inches of oil. Use a teaspoon or hand to scoop out a small ball of batter.
Fry at medium heat until golden brown. Drain the oil, and it's ready to serve!
Note：Adding rice flour makes the outer part of this fritter crispier.
Ready for afternoon tea!
