Braised Pig Trotter with Sea Cucumber【海参焖猪脚】


Mom wanted to eat healthier this year and reduce some meat dishes during the Chinese new year reunion dinner. When she conveyed her plan to my dad, the only thing my dad told her was that you can take out any dish but THIS Braised Pig Trotter with Sea Cucumber! 

Despite the price of sea cucumber skyrocketing in the past years, the Hokkien clan is still adamant about having sea cucumber for their reunion dinner, it is the roots and culture that our ancestors passed down for generations. So mom ended up cooking about 1 kg of sea cucumber and everybody licked the plate (well, ok, bowl) clean!!

This recipe has been in the family for generations and the first time I tried cooking was a couple of years back under mom's supervision. Since I discovered frozen sea cucumber in Bj's couple of months back, I have been meaning to prepare this dish for some times.

And there is this little thing, hubby secretly ordered a set of LC (Le Creuset) cookware after hearing me mumbled about I was the only one in my friend's circle that has no LC pot! The set reached last week just in time for Chinese new year!

So I can't wait to cook my favorite dish in my favorite pot for my favorite people! LOL

马来西亚的福建(永春)人过年的时候一定要有一道海参烧猪脚再加上碱水糕(米庚仔粿),原来是因为相信猪脚可以去晦气,所以过年的时候是一定要吃的。这个传统在我家几十年不变,今年我也来做一道海参烧猪脚过节吧!

今天用的海参是急冻的海参,不必泡发,方便很多,味道也很不错哦!

Ingredients: (For 4)
1 Pig trotter(Cut into pieces, washed, and blanch)
1 lb of Sea cucumber (Remove the inner part and clean thoroughly)
1 piece of ginger root Sliced
1 Spring onion/Scallion
1 head of garlic
2 Star Anise
1 cup of Chinese Cooking wine/Sao Xing Wine
1 tbsp Dark Soy sauce
2 tbsp Light Soy Sauce
1 tsp of Rock sugar
Salt to taste

材料: (四人份)
1只猪脚(去毛,切大块,汆烫备用)
1斤海参 (提前一个星期泡发处理干净,切块)
1大块姜(切两小片,剩下的拍扁备用)
1大扎葱
1 头蒜头
2 个 八角
1杯米酒/绍兴酒
1 大勺 黑酱油/酱油膏
酱油适量
冰糖适量
盐   Optional



1. Blanch the pig trotter pieces, wash, drain and leave it aside while you clean up the sea cucumber. Thaw and halved the sea cucumber, use a teaspoon to scratch away the dirty inner part, wash until it is clean, slice it into 2-3 inches in width.

2. In a cooking wok/pot, add another tsp of oil, add the pig trotter pieces and whole garlic (remove only the thin layer that cover the whole head, do not need to break or remove the individual garlic cloves and its skin). Keep stirring and cooking the pig trotter until the skin is slightly browned. 

3. Transfer it to a deep pot (Here my 3 qt LC pot), add the remaining cooking wine, soy sauce, dark soy sauce, rock sugar, spring onion and 5 cups of water. Bring the trotter to boil and turn the heat to medium low to braise the trotter for 1 1/2 hours. 

4. Add about 1 tsp of sesame oil or cooking oil in a cooking pan, add the ginger and cook until fragrant, add the sea cucumber pieces and 2 tsp of cooking wine, cook for about 2-3 minutes.

5. Add the sea cucumber into the pot and continue cooking for another 1/2 an hour. Taste to adjust salt level if needed, add about 2 tbsp of cooking wine before turning the stove off  if you wish, it enhances the smell and taste.

1. 先把猪脚洗净汆烫,洗去脏东西,沥干备用。海参洗净剖开,去内脏和沙子,处理干净,切成大约两寸宽。

2. 锅里热油把姜片、八角、和葱段炒香后加入冰糖和猪脚块炒至表皮有点焦黄,加入一整头蒜。把炒好的猪脚块盛入大锅里,注入水没过猪蹄,加入酱油、老抽/黑酱油和冰糖。先大火煮滚,后转中小火炖1 1/2个小时。

3.在一口干净的锅里用一点麻油/食油爆香姜片,倒入海参快速翻炒,喷上大约两大匙的米酒,盛起备用。

4. 
把炒好的海参加入锅里和猪脚一起再焖煮1/2个小时,起锅之前加入刚刚剩下的米酒或者是绍兴酒,滚一滚,试试味道,不够咸的话加点盐即可。
