Chicken Seekh Kebab 【印式烤鸡肉串】


Sheekh Kebab is something that I had a lot during my days back in India especially mutton kebab. This juicy and yummy BBQ is so scrumptious that I can never stop at one.

I made created recipe for this kebab for valentine's dinner, we had it with a glass of wine to go with a movie after baby A went to bed... It was one good way to celebrate the lover's day.

这款烤肉串是我在印度的时候经常吃的美食,烤得好的肉串香辣多汁非常美味。美国的印度餐厅也大多会有这款烤肉串,质量就比较参差不齐。

最近俊爸买了个小烤箱,做这类烧烤小吃就很方便。情人节那天宝宝睡下了后,和老公来杯红酒,做几串烤鸡串,再加上一套好电影,日子这么过就是幸福了。

Ingredients:
600 gm minced chicken
2 egg whites(around 60 gm)or 1 large whole egg
2 tbsp oil
1 cup chopped onion
1 cup chopped Cilantro
1/4 cup chopped tomato
8-10 bamboo skewer

Seasoning:
1 tbsp Ginger Garlic Paste
1 tbsp  Coriander Powder
1 tbsp Tandoori Masala     or    1 tsp Garam Masala
2 tsp salt or to taste
1 tsp Cumin Powder
1-2 tsp Chili Powder
1 tsp Black Pepper Powder

材料:
600 克 鸡肉末
2 只 鸡蛋的 蛋白 (大约 60克)或 一只 全蛋 (大)
2 大勺 食油
1 杯 切碎的洋葱
1 杯 切碎的 芫荽/香菜   Cilantro
1/4 杯 切碎的番茄
8-10 只 竹签  

调味:
1 大勺 姜蒜蓉
1 大勺 芫荽粉  Coriander Powder
1 大勺 Tandoori Masala 或 1 小勺 Garam Masala
2 小勺 或 适量 食盐 
1 小勺 孜然粉  Cumin Powder
1 小勺 辣椒粉  Chili Powder
1 小勺 黑胡椒粉 Black Pepper Powder



1. Soak skewers in water for an hour or so, mix minced chicken with egg and all seasonings and spices to marinate for an hour.

2. Mix in oil, chopped tomatoes, cilantro and onion after that, stir it well using a spatula until the mixture become slightly sticky.

3. Spray or brush some oil on a baking sheet. Take out a handful of minced meat and shape it oblong, insert a bamboo skewer and place it on the baking sheet, shape further if you wish.

4. Broil/Grill at high for 8 minutes, turn it and broil or grill for another 2-3 minutes until you sees some nice charred.

1. 先把竹签泡水备用。把肉末和鸡蛋混匀,加入所有的调味料腌一个小时。

2. 一个小时后加入食油,切碎的番茄,洋葱和芫荽,大力搅拌至黏稠。这个时候可以取一小块微波45秒试试味道,然后可以根据自己的喜好再调整咸淡。

3. 烤盘抹上或喷上一层油。抓出一团肉末,捏成长条状,插入竹签,摆到烤盘上再稍微整型。在肉串上喷上或刷上一层薄薄的油。入烤箱Broil/Grill 8 分钟,翻面再3-4分钟即可。

吃的时候可以配上薄荷沾酱或挤上一点柠檬汁。Serve with Green chutney Or some lime/lemon juice.
