Assam Pedas Fish 亚参鱼



Assam Pedas' direct translation in English is “sour spicy”. It is a classic Malaysian dish that almost every housewives in Malaysia will have their own recipes for Assam Pedas.

Albeit endless versions of the recipe, one thing never change, that is : It has to be sour, spicy and burst with flavor in the mouth!

亚参鱼是一道非常家常的马来(西亚)菜。在马来西亚,几乎家家户户都会有自己独特的食谱和烹饪方式。

虽然食材和烹饪方式有些变化,不变的是这道菜的味道:酸辣开胃,丰富的味道让人欲罢不能哦!


Ingredients:
2 Mackerel fish or few pieces of stingrays Clean and marinate with little turmeric powder and salt
2 Medium size tomatoes (cut into big chunks)
7-8 Small Okra
1 stalk of lemongrass (Use only the white part, bruised)
1 cup of Daun kesum/Daun Laksa/Vietnamese mint/Rau Ram
3-4 pieces of Asam Gelugor/Asam Keping/Garcinia Cambogia/Kudam Puli
1 tsp of Tamarind paste
2-3 tbsp of Sambal Tumis Paste   OR 

Pound/Blend together below to form a paste:
10-15 dried chilli
2-3 Shallots
2 cloves of garlic
1 inch of galangal
1 stalk of lemongrass(use only the white part)
1/2 tablespoon/10 g of shrimp paste/Belachan

材料:
2 条 鲭鱼 或 几大块的 蒲鱼
2 只 中型 番茄 (切大块)
7-8 根 秋葵
1 根 香茅 (取白色部分,稍微捣开)
2 杯 的 叻沙叶(Daun kesum/Daun Laksa/Vietnamese mint/Rau Ram)
3-4 片 的 亚参片(Asam Gelugor/Asam Keping/Garcinia Cambogia/Kudam Puli)
1 小勺 罗望子膏
2-3 大勺的 多用途叁巴酱   或者

将以下材料捣/搅拌成糊状:
10-15 只辣椒干
2-3 只 红葱头
2 瓣蒜瓣
1 寸的 兰姜(galangal)
1 一根 香茅 (去白色部分)
1/2 大勺/10 克 的虾酱(shrimp paste/Belachan)




1. If you do not have sambal tumis paste at home, blend ingredients listed above to form a paste. Heat up 3 tbsp of oil and add the Sambal tumis paste/ Chili paste and saute, add the lemongrass and cook until oil separates.

2. Add 500 ml of water into the pot and bring to boil, add tamarind paste and Asam Gelugor/Asam Keping/Garcinia Cambogia/Kudam Puli, cook for 5 minutes and add half of the Daun kesum/Daun Laksa/Vietnamese mint/Rau Ram and cook for another 5 minutes.

3. Add okras, tomatoes and fish pieces into the pot, cover with lid and bring to boil. Season with salt and sugar to taste.

1. 如果你家里没有现成的叁巴酱的话,把食谱里列出的辣椒酱材料捣/搅拌成糊状。

2. 锅里热上3大勺食盐,加入辣椒酱/多用途叁巴酱和香茅炒至油溢出。

3. 炒好的辣椒酱加入500克水煮滚后加入罗望子酱和亚参片,加盖再煮5分钟后加入叻沙叶,继续煮几分钟。

4. 加入秋葵、番茄块和鱼,加盖煮滚后加糖和盐调味即可。

Serve with Steamed white rice.
