【爆浆脆酥球】Golgappa/Pani Puri



今天我们来做电影《摔跤吧,爸爸》里面女主爱吃的脆球饼,也是我家LD特别爱吃的一款点心。这种空心球,电影里叫 Golgappa,它还有另外一个名字叫 Pani Puri (पानी पूरी)Pani 的意思是水,指的应该是灌入的香料水;Puri 指的是炸好的空心小面球。这种小球球可是印度街头热卖的小吃,只要有街头小吃摊的地方,就有它。

它的吃法是在油炸的空心面球里塞入土豆泥或者煮软的豆子,放入一点的酸子沾酱薄荷沾酱再灌入辛辣的绿色香料水,一口放进嘴里咬破,口感味道特别丰富,是个很特别的味觉体验!

Years back, when I was still dating my husband, he brought me to a roadside stall in Delhi and brought 6 tiny puffs full of spice water and seasonings. That was my first encounter with this interesting snack called Golgappa/Pani puri.

When I popped the puff into my mouth the very first time, the burst of flavors and the combination of liquid and crunchiness of the fried puris is really a very unique experience.

Since there is no roadside stall selling this snack here in the United States, and the local Indian supermarkets are selling freshly made puri puffs for this snack, I have learnt to make it at home, and have since perfected the recipe.




材料:
30 Golgappa/炸脆球 (我是印度超市买炸好的)
1 只 中型 洋葱 (切碎)
1/2 杯 脆豆面条 Sev
1/4 杯 酸子沾酱
1/4 杯 薄荷青酱
1 1/2 杯 水煮土豆/水煮鹰嘴豆
1/2 小勺 食盐
1/4 小勺 姜黄粉
1/4 小勺 辣椒粉
1/4 小勺 孜然粉
1/4 杯 切碎的芫荽   可无

香料水食谱:
1/2 寸姜块 (去皮切碎)
1/3 杯 薄荷叶
2 大勺 切碎的芫荽叶/香菜
1-2 只青辣椒
1 只柠檬 (挤出柠檬汁)
半杯冰块
3-4 大杯冰水
1 大勺 鹰嘴豆脆饼(Boondi)装饰用

香料水调味:
2 大勺 孜然 (煸香,磨成粉)
2 小勺 糖
1 大勺 芒果粉 (Amchur Powder)
1/2 小勺 黑盐 (Kala namak)
一点点 食盐


Ingredients:
30 Golgappa/Puris (Shop bought or homemade)
1 medium size onion (Chopped)
1/2 cup Sev
1/4 cup of Tamarind Chutney/Imli Chutney
1/4 cup of  Green Chutney
1 1/2 Cup of Boiled Potato / Boiled Chickpeas
1/2 tsp of salt
1/4 tsp of turmeric powder
1/4 tsp of chili powder
1/4 tsp of Cummin powder
1/4 cup of chopped Coriander Leaves  Optional

For the Pani :
1/2 inch of ginger (skinned and chopped)
1/3 cup of mint leaves (Pudina)
2 tbsp chopped coriander leaves/Cilantro
1-2 Green Chilies
1 Lemon (squeeze out the juice)
1/2 glass of ice cubes
3-4 glass of chilled water
1 tbsp Boondi for garnishing

Seasoning for Pani:
2 tbsp Cumin (Jeera)(roast and grind into powder)
2 tsp Sugar
1 tbsp dried mango powder (Amchur Powder)
1/2 tsp Black salt (Kala namak)
A pinch of salt



1. 先制作香料水,把食谱里所有的食材(除了点缀用的脆饼)放到搅拌机搅匀.

2. 把搅拌好的香料水倒出装瓶加上冰块和脆饼就即可冷藏备用。

1. Blend together all ingredients listed under “For the Pani" (beside Boondi for garnishing) in a blender/mixer.

2. Pour the water into a jar and add some ice cubes, add some Boondi for garnishing.




3. 把一只土豆煮好剥/削皮。切小块或压成泥,把食盐、姜黄粉、辣椒粉和孜然粉加入拌匀备用。

4. 把酸子沾酱、薄荷青酱、脆豆面条、脆球和香料水准备好。

5. 取一只脆球上层稍微压碎,加入一点土豆块/泥、一点酸子沾酱、一点薄荷青酱、一点脆豆面条、一点洋葱碎和芫荽碎。

6. 吃前从破口处注入香料水,直接一口塞入口里咀嚼,就能感受味觉的盛宴了哦!

3. Boil a potato/some chickpeas, cut the potato into small cubes, season with salt, turmeric powder, chili powder and Cumin powders, mix well.

4. Place all of the ingredients needed together before serving.

5. Take one puri and lightly press the top part to break a small hole, insert a little potato, a little tamarind chutney, a little green chutney,some chopped onion, cilantro and some Sev.

6. Add the spice water into the shell right before popping it into the mouth and enjoy! Serve as many the same way as required!
