【绿叁巴酱】Sambal Ijo (Indonesian Green Sambal)

几年前我接了一份在费城为期一年的工作,所以经常会在下班时开车到附近的“印尼城”去买印尼超市里的盒饭回家当晚饭。

其中一款我很喜欢的盒饭是绿叁巴鸡块盒饭,和一般的红辣椒叁巴不一样,更清新好吃。

不久前阿姨送来一大盒她自己种的墨西哥绿番茄 Tomatillos,刚好特别适合拿来做印尼的这款绿叁巴。我就做了一大盒放冰箱里慢慢吃。

A few years back I was on a one year project in Philadelphia, PA, so I used to visit the "Indonesian Town" near my office in Philly after work to buy packed foods for dinner. One of my favorite packet meals is Sambal Ijo Ayam (Green Sambal with Chicken), it is different than the normal red sambal yet very spicy and refreshing.

My aunt sent me a big box of Tomatillos that she planted during the summer time, it is perfect for this Sambal, so I made a big batch of Sambal Ijo with it. 


材料:
250 克 绿辣椒 (我用了两种不同的绿辣椒)
200 克 墨西哥绿番茄 Tomatillos
4 只/ 80 克 红葱头 Shallots
8 瓣/40 克 蒜瓣
1 小碗/80 克 江鱼仔 
1/2 小勺 糖
1.5 小勺 或 适量 食盐

Ingredients:
250 g of Green Chillies (I used two different types)
200 g Tomatillos
4/ 80 g  Shallots
8 clove/40 g garlic
1 bowl/80 g Dried Anchovies (Cleaned) 
1/2 tsp salt 糖
1.5 tsp salt or to taste


1. 先把江鱼仔洗净沥干,锅里热上大约3-4 勺食油,把江鱼仔炸酥取出沥干备用。

2. 把其他材料都清理好切块/切段,倒入刚刚锅里剩下的油里煸炒至断生。

3. 取出放到捣臼里捣烂,回锅加盐和糖调味,喜欢油润点的可以再加一点油炒,起锅前把炸酥的江鱼仔拌入即可。

此酱可以拌饭也可以当肉类沾酱,非常好吃。可以密封冷藏2周左右。

1. Clean and drain the anchovies, heat about 3-4 tbsp of oil in a cooking pan, fry the anchovies until crispy. Drain and set aside.

2. Clean and prepared the other ingredients accordingly. Add all of the ingredients in the cooking pan with the remaining oil and cook for about 5 minutes.

3. Place all cooked ingredients in a mortal and pestle and pound into a coarse paste. You can also use a food processor to do this.

4. Add the paste back to the cooking pan and season with salt and sugar, you can also add a little more oil to cook. Add fried anchovies and mix well.

This Sambal goes well with any meat dishes, the prepared sambal can be stored in a container with lid in the fridge for 2 weeks.
