Egg is well loved in my house and this simple yet super delicious Egg sambal is a very versatile dish, it goes well with fried noodle/rice noodle, fried rice as side dish, it even taste awesome with just plain rice!
I made this today to go with my long bean rice. So long bean rice with Egg sambal, dinner is served!
Ingredients:
4 Hard boiled eggs
2 tbsp Sambal Tumis
1/2 Bombay onion
1/3 cup coconut milk
1/4 cup Green pea
1 stalk lemon grass
1 kaffir lime leave
1. Slice the onion into rings, wash the frozen pea, cut lemongrass into about 2 inches and brush it a little. Boiled and shelled eggs, halved and placed in a serving plate/bowl.
2. In a frying pan, heat up some oil and add sambal belachan, lemongrass, lemon leave and stir fry for a while.
3. Add coconut milk, cook for about 2 minutes, season with salt and sugar, bring it to boil, then add green peas, cook until gravy thicken.
4. Pour the sambal gravy onto the eggs... and it is done!
