Masala Baigan (Spicy Brinjal with shredded coconut)


According to my mum in law, hubby dislike brinjal since he was a little boy, on the contrary, I love brinjal, and could eat it in whichever way. I guess he was kinda influenced by me, and developed some liking to this beautiful vegetable...

Here is one spicy brinjal dish that hubby liked very much, especially when it is prepared to go with his beloved Kadi...


Ingredients:

Big brinjal (1)

Grind together:
1 bombay onion
2 tsp shredded coconut
5-6 cashew nuts
1 tsp shredded ginger and garlic

Seasoning:
Garam Masala 1 tsp
Coriander powder 1 tsp
Red chilli powder 1/4 tsp
Turmeric Powder 1/4 tsp
Salt to taste
Cilantro chopped, about 2 tbsps

Cuteggplant into about 1.5-2 inches length, and 1/2 inch in witdh, in a cast iron pan, add about 2 tbsps of vegetable oil, cook the brinjal pieces in medium flame, till it become soft.



Grind together all the ingredients mentioned above



In a cooking pan, add 1 tbsp of oil, pour in the paste grinded just now, cook until oil seperated at the edge, the add in all the seasoning spices, cook for another 1 minute or so.

Now add the brinjal pieces, stir well, and cook for another 3-5 minutes, add the chopped cilantro before serving.



It goes well with steamed rice or flat bread!
