
During these cold rainy autumn days, our favourite thing to do would be a cuppa hot tea and some spicy homemade cookies......
So I made these Chewy Pine Nut oatmeal Raisin Cookie, a speacial treat for special season--- my favourite fall!
Ingredients:
1/2 cup Butter
1/2 cup heavy Cream
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1 1/2 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon powder
1/2 tsp salt
3 Cup oatmeal
1 cup raisin
1 cup pine nuts/any type of nuts

First preheat the oven to 350 degrees(175 celcius), bake the pine nut for 8 minutes, cold it and grind it coarsely.



In a large mixing bowl, cream together Ghee,heavy cream,brown sugar, white sugarVanilla Extract and egg.

In anothe mixing bowl, mix together oatmeal, baking soda, cinnamon powder, salt, wholewheat flour, raisin ( I also add in a handful of remaining mixed cereal we have at home.)

Mix together the creamed ingredients and the dry ingredients, and when the ingredients are well mixed, add the pinenut, and mix it well with the other ingredients.


Drop by rounded spoonful on bakingsheet (with parchment paper), turn it into the oven (preheat to 350 degrees) and bake for 12 munites. Cool it on cookie cooling rack, before storing it.
