Aloo Gobi (Spicy Cauliflower and potatoes)




Aloo Gobi is a North Indian Vegetarian Dish made with cauliflowers, potatoes and indian spices, it is a perfect side dish for a good meal consist of dal/curry and flat bread (Roti/Naan).

This recipe I am using is one of the best recipe I have learnt, it never fails to impress our guest, many of my Chinese friends actually tried this after reading my post previously!

这个香辣土豆菜花(Aloo Gobi)食谱是我试过最好吃的食谱,作为side dish很好。是素食者很好的一个选择哦!


Ingredients:
1 large Potato
2 cups of Cauliflower
1 bunch of Coriander leaves/Cilantro
2 Green Chilies, seeded, slice lengthwise, and cut into 1 inches long


Spices:
A pinch of Asafoetida (hing)
1 Stick of Cinnamon
2 Bay leaves
1/2 tsp Coriander  (Dhania) powder
1/4 tsp Cumin (Jeera)  Powder
1/2 tsp Cumin seed (Jeera)
1/4 tsp Chili Powder
1/4 teaspoon Turmeric Powder (Haldi)
Salt to taste

材料:
1 只 马铃薯/土豆(长型)
2 杯 的 菜花
芫荽一把
2 只 朝天椒,横向划开,把种子去了,切断。

香料:
阿魏胶(Asafoetida)少许
桂皮一段
桂叶两片
1/2 tsp 芫荽粉
1/4 tsp 孜然粉
1/4 tsp 辣椒粉
1/4 tsp 黄姜粉
1 tsp 孜然
盐适量





1. Brush and wash the potato with skin using a brush, then cut it into wedges, cut the cauliflower into florets.

2. In a small bowl, mixed all the spices and salt with 2 tablespoon of water, stir well until it form a consistent paste.

3. In a cooking pan, add 2 tablespoon of oil, cinnamon stick, cumin seed Asafoetida and bay leaves, stir for few seconds. Pour in the spices paste and cook until the oil separated from spices.

4. Add the potatoes wedges, fry for about a minute, then cover with lid for another minute. Add in the cauliflower continue cooking at medium heat.

5. Now pour in 1/2 cup of water, bring it to boil and turn the heat to medium, cover with lid and cook for another 10-15 minutes or until the potatoes and cauliflower are cooked. Turn off the stove and add the coriander leaves.

1. 把土豆带皮用钢刷刷干净,然后切成wedges的形状,然后菜花切开,辣椒切段,芫荽切碎备用。

2. 在一口小碗里加入所有香料和盐,加两大匙水兑上。锅里加上两匙的油,桂皮,阿魏胶和孜然爆香, 然后倒入香料糊,煮至边上泛油。
3.加入土豆,炒一炒,然后转小火,加盖干焖大约一分钟,一定要小火。然后加入菜花,拌炒,加盖再闷一分钟左右。

4.倒入1/2杯水,大火煮滚之后,小火加盖焖大约10分钟,焖干,马铃薯和花菜变软之后即可。熄火后加入芫荽拌匀即可。

Serve with Roti/Chapati.
