I made Mathri couple of weeks ago and have been toying the idea of making a healthier oven baked version for days. I was on the phone with my best friend Surbhi and she was like "when are you going to make an oven baked version of Mathri?"
That's it... One gotta do this for ya best of friend... yeah? Sur?
Ingredients:
1 cup Whole wheat flour (atta)
1/4 cup Semolina Flour (suji)
1/2 tsp baking powder
1 tsp chili powder (optional)
1/2 tsp Caraway (Ajwain)
1 tsp Cummin Seed (Jeera)
1/8 tsp Black pepper powder
2 tsbp Butter/Ghee
½ tsp Salt
½ cup Luke Warm Water minus 2 tbsp
Knead together all the ingredients into a slightly harder dough, leave it aside for about 10 minutes。
Roll it out to about 1mm thick, use a round cookie cutter or a cup in about 5-6cm in diameter, cut the mathri into round shape and use a fork to poke the mathri around, this is to prevent puffiness during baking.
