Simple Egg Curry

Egg is my favourite cooking ingredient, it goes well with almost anything! When I am short of time or just a dish short for dinner, all I need to do is to make some egg dishes, in less than 10 minutes, I got ourself a whole new dish!

This Egg curry is our all time favourite, when I am lazy or busy, I make this simple curry with some steam rice, and that is good enough!

4 Hard boiled egg
2 medium size plum tomato
1 medium size onion
1/2 inch of ginger
3-4 Cloves of garlic
3-4 green chillies
2 tbsp snow pea
1/2 cup low fat yoghurt
1/2 cup water

1 tsp cummin Seeds
1 tsp Coriander Powder
1/2 tsp Mustard seeds
1/2 tsp Tumeric Powder
1/2 tsp Chili powder
1/4 tsp Garam Masala (Optional)
Salt to taste

Blend together ginger, garlic, tomato, chilli and onion into a smooth paste, pour it into a cookware, boil to reduce water content. halved the hard boiled egg.

When the water content of the paste reduce significantly, add about 2 tbps of oil, stir for 2-3 minutes. Push the paste aside, add another tsp of oil, add cummin seeds and mustard seeds. Now add all powder spices and stir well for 2-3 minutes until oil separated.

Blend the low fat yoghurt with 1/2 cup of water, pour the blended yoghurt into the cookware, bring to boil. And carefully lay the eggs with yolk side facing up. Add salt to taste, cook for another 3 minutes, add sweet peas, bring to boil again, and simmer for 2-3 minutes. and its done!

Do not serve right away, let the curry sit with lid covered for another 10 minutes will make it tastier! Give it a try?
