Frozen Paratha Samosa

 


I always keep a packet of frozen paratha in my freezer. It comes in very handy when I am either busy or lazy.

The other day while chatting with a group of friends in a forum, one of the girl asked about a good way to use frozen paratha, and whether it could be turned into samosa.

I loved the idea and set off to check recipes online and found handful of them... looks like we are not the first one to think it that way! I like my version of samosa filling, using homemade Malaysian curry powder, so here it comes my version of frozen Paratha samosa!




Ingredients: (Yield 6-8)
3-4 Frozen Flaky paratha (I used Kawan brand)


Filling:
2 Potatoes (about 300 gm)
1 medium size onion(chopped)
1/3 cup Sweet Pea/carrot (chopped)
2 tbsp Malaysian Curry Powder (or any curry powder)
1 tbsp Soy Sauce
1/2 tsp Salt
1/2 tsp Sugar


Others:
1 egg yolk





Cook potato, skinned and cut it into pieces, chop the onion. In a cooking pan, add about 3-4 tbsp of oil, fry onion until its fragrance,  add curry powder, give a quick stir, add potato pieces, stir well and mash the potato pieces a little. Season with Soy Sauce, salt and sugar.



Add peas at the end, mix well and let cold.





This is the paratha I used...





Cut paratha into half, place filling at one side,and crimp like a pastry, use a fork to press the edges to strengthen the seal. 


Preheat oven to 400 F (200 C).


Use a sharp knife to lightly make 3 strokes, briefly beat the egg yolk and brush the egg yolk over pastry.


Bake for 20 minutes or until golden brown.

    Half thawed, as long as it is fold-able and not too sticky yet.
