Spicy Sardine Sambal With Potatoes

The weather is getting colder by the day, so I have been craving for some spicy dishes that could warmth the body and my heart for quite some times.

So I made this Spicy Sardine Sambal with Potatoes today, it is a good dish to help improving appetite and a dish often  made back home shall the stock in the fridge run low.

It is so simple and quick that it could be made under 15 minutes.

1 can of sardine in tomato sauce
1 Medium size potato (skinned and cubed) This is my homegrown!
1/2 medium size onion (slice)
2-3 green or red chilies (cut into 1 inch long)
2-3 tbsp Ketchup
Salt to taste
1-2 tbsp Sambal Tumis

1. Heat up about 1 inch of oil in a wok and deep fry the potatoes until golden in color.

2. Scoop out excess oil and leave about 2 tbsp, add the sambal tumis and cook until oil separated at the edge.

3. Stir in sliced onion and green chili, followed by fried potato cubes, cook for 1-2 minutes, pour in 1 cup of water and bring to boil, season with salt and ketchup, cook for 3-4 minutes.

4. Add the sardine with its sauce, cook for 2-3 more minutes or until the gravy reaches desired consistency. Try not to over stir the fishes, else they will break.

It is a perfect dish to go with steamed jasmine rice!
