Tomato Chutney

I will normally prepare this chutney for snacks like samosa, Kati roll, spring roll or pakora, it goes very well even for grill sandwich too!

A good use of tomatoes when it is growing too much too fast in the garden!

Ingredients:
3-4 Fully ripe tomato
1/2 tsp grated ginger
3-4 green chilies (reduce to half if you like it less hot)
1 tsp Cumin Seeds
1 tsp Mustard Seed
1 tsp Urad Dal Optional
8-10 Curry leaves

Seasoning:
1/2 tsp Turmeric Powder/haldi
1/2 tsp Chili Powder
1/2 tsp Brown sugar/Sugar
1 tsp Salt

In a food processor, blend together green chili and tomato.

In a cooking pan, heat up 1-2 tbsp of oil, add cumin seeds, mustard seeds and grated ginger, stir well, add Urad dal and curry leaves, stir again until fragrance.

Pour in the chili and tomato paste, bring to boil, add chili powder, turmeric powder, salt and sugar, turn the heat to low and cook for another 15 minutes.
