The original recipe was posted on Wenxuecity years back as rice cooker chicken and immediately became a hit, as it is very easy to follow and is really tasty...
I was in India then and was fascinated by the recipe, as I could find all the ingredients easily, I later modified it a little and added rice, it immediately turned into a one pot meal, so simple and yum!
Chicken Drumstick/thigh （4）
8-10 cloves/ 1/3 cup of chopped/minced garlic
2-3 shallot (chopped) Optional
1 tsp + 1/2 tsp salt
a pinch of black pepper powder
5-6 slices of ginger root
1/2 tsp Sesame oil
2 cup Rice （Washed and drained）
2 1/2 cup Water
1. Clean the chicken pieces, add minced garlic, a pinch of black pepper powder and 1 tbsp of salt, mixed well and marinates for at least one hour, preferable over night.
2. In a rice cooker, add 1/2 tsp of sesame oil, stir in chopped shallot and heat up the rice cooker, cook the shallot for a few minutes until translucent, add marinated chicken and ginger, cover and press cooking button again.
3. When the cooking process is done and the rice cooker showing warming signal, add in the rice , 1/2 tsp salt and water. Stir well and press cooking button again, let the rice cooked until the signal turned to warming again, wait for 5 minutes before serving.
Lunch is served, Rice cooker chicken rice
