Dum Aloo(Roasted Potatoes in Creamy Gravy) 腰果土豆咖喱



I have been a little lazy lately, not working out as much as I should. It has got to do with my poor sleeping pattern. So I was really looking forward to the long weekend so that I could get some much needed rest.

As planned,this weekend was a quiet one, our dear friend A came from NYC and spent the afternoon with us on Saturday, we had fun chit chatting and went out for a good Indian dinner at a nearby restaurant. Sunday was rainy again so we decided to stay in and enjoyed a few movies at home.

N had requested potato curry sometimes ago, since I have been wanting to blog on Dum Aloo for a long time, I made this yummy dish for lunch, it is really creamy and delicious!

这道有名的克什米尔素食入口即化,浓浓的腰果香味让这道菜带有迷人的贵族气息。据说是一道从前只有皇族和贵族才能吃上的美食哦!

Ingredients:
20 baby potatoes/ 4 Idaho potatoes cut into 4 pieces  
1 large red or yellow Onions
2 medium size tomatoes 
2 tsp of ginger garlic paste ( or 1 tsp of minced garlic and 1 tsp of minced ginger)
3-4 dry red Chilies (Optional)
15 pieces of Cashew nuts
1 Cup Whole Milk 
1 tbsp Butter/Ghee
2 tbsp oil
2 tsp ketchup

Spices and seasoning:
3-5 Cloves
1/4 tsp cardamom seeds
1 Stick of Cinnamon
1 tsp Cumin Seeds
1 tsp of Turmeric
1 tsp Garam Masala 
2 tbsp of Raisins (Optional)
Salt to taste (around 1 tsp)

材料:
15-20 只 小土豆4 只 土豆 (切滚刀块) 
1 只 洋葱
2 只 中型番茄
2 tsp 姜蒜蓉 (或1 寸姜和4 瓣蒜瓣切碎)
3-4 只辣椒干 (Optional)
15 只 腰果
1 杯 全脂奶  
1 tbsp 黄油/Butter/Ghee
2 tbsp 食油
2 tsp 番茄酱 Ketchup

香料和调味:
3-5 只丁香 Cloves
1/4 tsp 豆蔻籽 cardamom seeds
1 段 肉桂 Cinnamon
1 tsp 孜然 Cumin Seeds
1 tsp 姜黄 Turmeric
1 tsp 印度五香粉 Garam Masala
2 tbsp 葡萄干 Raisins (Optional)
1 tsp 盐 Salt 或适量




1. Peel, cut and clean the potatoes if Idaho potatoes are used. For baby potatoes, just clean it well. Boil/steam potatoes for 10 minutes.

2. Deep fried the potatoes until golden in color. Drain.

3.  Slice onion, grind together ginger garlic paste, tomatoes, chilies and cashew nuts into a smooth paste.

1. 把土豆去皮切块,蒸十分钟后炸成金黄色备用。如果用的是小土豆,蒸十分钟后,炸成金黄色备用。

2. 把番茄,腰果,辣椒,姜蒜蓉和一点水搅拌成糊状。洋葱切丝。


3. Add butter and oil in a cooking pot together with Cinnamon stick, cardamom, cumin seeds and cloves, stir until fragrant; add sliced onion, continue cooking until the onion turn translucent.

4. Add ground cashew and tomato paste, cook until the oil separated at the edge, add potato pieces and turmeric powder, stir well.

5. Add 1 cup of water and 1 cup of skimmed milk, bring to boil, season with garam masala, ketchup and salt, continue cooking until gravy reduced to the consistency of your liking.

3. 在一口锅里,热上黄油和油,加入丁香,桂皮,豆蔻籽和孜然一起爆香后加入洋葱丝,煸炒至洋葱丝变透明。

4. 倒入番茄腰果糊,煸炒至边上泛油,加入烤好的土豆,和姜黄,翻匀。加入牛奶煮滚,中火继续煮大约10分钟,加入Garam Masala,番茄酱和盐调味。

5. 起锅之前加入葡萄干即可。

I like to serve this with steamy hot naan right out of the oven!
和热乎乎的Naan一起吃,特别香!
