I love Flat Bean Braised Noodles and made it many times, it is quick and very nutritious, an easy one pot meal for the family and could be done in under 30 minutes!
I made this favourite dish today using Long bean and carrot, it turned out even better in taste! I will most likely do this more often in future!
我超喜欢吃扁豆焖面,也经常做。平时工作比较忙碌的时候回家焖上这个面,从开始准备到吃上饭也就半个小时左右,还蔬菜、蛋白质和碳水化合物都有了。而且非常好吃哦!
这一次用豆角和胡萝卜焖这个面,更美味。下次除了扁豆,我应该会经常做豆角焖面了哦!
Ingredients:
250 g Long Bean
50 g/1 Carrot
300 g Fresh noodle
5-6 Thick cut Bacon (Or thinly sliced pork belly marinated with a little cooking wine and salt)
2 tbsp Minced Garlic
2 tbsp Soy sauce
1 Star Anise
Salt to taste (Around 1/8 tsp)
A pinch of Pepper powder
材料:
250 克 豇豆/豆角
50 克/1根胡萝卜
300 克 手擀面
5-6 片 厚 培根 或切片的五花肉加点料酒和食盐腌一会儿
2 大勺 蒜蓉
2 大勺 生抽/酱油
1 只 八角/大料
适量食盐 (大约1/8 小勺)
一撮 胡椒粉
1. Clean and cut long bean into about 2 inches long, peel and cut carrot into similar size.
2. Mince ginger and slice bacon into about 1 inch thick.
3. Heat up a wok or a deep bottom cookware, DO NOT add oil, cook bacon until fat/grease release.
4. Add star anise, Carrot and long bean, stir until the colour changes. Add 2 cups of water, the beans should all submerged in water. Bring the mixture to boil.
5. Add soy sauce, pepper powder and salt to taste. Take out a bowl of the stock, approximately 1 cup worth and leave aside.
6. Turn heat to medium and loosely spread noodles over the beans. Cover with lid and cook for 5 minutes. After 5 minutes, use a fork or chopstick to lightly loosen up the noodle, spread half of the reserved stock over the noodle, as evenly as possible.
7. Cover with lid and cook the noodles for another 5 minutes. Repeat the same steps with the remaining stock and cook for another 5 minutes or until all liquid almost dried out.
8. Turn the stove off, add chopped garlic and turn beans and noodle with the help of chopstick and spatula, let the noodles sit for another 5 minutes before serving.
1. 把豇豆/豆角洗净切段,胡萝卜削皮也切成类似的长段。
2. 把蒜蓉切好,培根切成1寸宽左右。
3. 热上一口锅,把培根如果炒制之香酥,猪油溢出。加入八角/大料,稍微煸炒。
4. 加入豆角和胡萝卜,煸炒一分钟,加入两杯水,水要没过豆子和胡萝卜。煮滚后加入酱油、食盐和胡椒粉调味。
5. 盛起一饭碗的汤汁备用。转中火,把面条弄散铺在豆角上,加盖焖煮5分钟。
6. 5分钟后用筷子或叉子稍微把面团弄散,淋上半碗刚刚盛起来的汤汁,加盖再焖煮5分钟。
7. 把剩下的半碗汤汁淋上,焖煮至汤汁差不多干时,拌入蒜蓉。把面条和豆角拌匀,稍微等两分钟即可食用。
