It can be eaten as a cooked vegetable and is great to use in salads, soups, stews or any dish you wish to sprinkle it over. Purslane is antibacterial, antiscorbutic, depurative, diuretic and febrifuge. The leaves are a very rich source of omega-3 fatty acids which prevents heart attacks and strengthens the immune system.
I collected some purslane from the riverside one afternoon when I was strolling around and made this salad for lunch later on.
马齿苋是一个常见的野菜,生长于田野间,大路边,甚至于墙角下都可能有它的踪影。
“马齿苋”是“马苋菜”的同义词。 属于马齿科一年生肉质草本植物,学名“马齿苋”,民间俗称“马蜂菜”,是一种特色野菜。因其生命力极强,又有“长寿菜”之称。
马苋菜为药食两用植物,全草可供药用,有清热利湿、解毒消肿、消炎、止渴、利尿作用;种子可明目,可作兽药和农药;嫩茎叶可作蔬菜,味酸,也可作饲料。
前两天散步时发现一堆马齿苋,摘了一大把回家做了凉拌马齿苋,很好吃哦!
Purslane being cultivated as ornamental plant
家养的马齿苋,在我的家乡也有人叫它太阳花,因为花是太阳升起时开,太阳下山就枯萎了。
Ingredients:
1 big bunch of purslane
Dressing:
1-2 cloves of garlic (minced)
1 tsp of Red oil
1 tsp of Soy sauce
1 tsp of Black Vinegar
1/4 tsp of sugar
1 tbsp of water
材料:
1 大把 马齿苋
酱汁:
1-2 瓣 蒜瓣儿 (捣碎)
1 小勺 红油
1 小勺 酱油
1 小勺 黑醋
1/4 小勺 糖
1 大勺水
1. Make the dressing by mixing all ingredients listed together. Adjust seasonings to personal taste.
2. Thoroughly clean the purslane, rinse and pat dry. Pick the leaves and young stems for use.
3. Bring a pot of water to boil, blanch purslane for a brief 30-45 seconds, take it out and rinse with cold water 2-3 times to remove sourish taste.
4. Drain and place the purslane in a bowl, add the dressing and serve.
1. 先把酱汁里列出的材料都拌匀备用。可以按个人口味调咸淡。
2. 把摘来的马齿苋摘好,只取嫩叶和细杆,洗净沥干。
3. 煮滚半锅水,把马齿苋入锅烫个30-45秒就立刻捞出用凉水冲洗2-3遍,这样做可以稍微去酸味,也可以保持爽脆的口感。
4. 沥干摆到碗里,淋上酱汁拌匀即可食用。
