【小鸡炖蘑菇】Chicken With Dried Mushroom Stew



几年前出差的时候认识了一位哥哥,他是东北人。因为工作时间比较长,我们几个同事经常下班后一起吃饭,渐渐地就成了好朋友。我哥回中国后每次往美国寄货的时候总会夹点东北的特产给我,野生榛菇是必定不会少的。

前几天去亚洲超市囤点粮食的时候买了一只走地鸡,那么好的榛菇当然要好的鸡肉才配得上罗!今天午餐就吃小鸡炖蘑菇,真香!

A few years back, I went to work on a project in upstate New York and met a few clients from the
North Eastern part of China, since we were all working on a project and were also staying in the same hotel, we also had dinner together every evening and eventually became friends.

Once the project was over and the clients back to China, we were still keeping in touch and one of them keeps sending me stuff from China whenever he has a shipment to send to USA. 

Wild Zhen Mushroom (榛菇) is one of the special items from North Eastern China that he has sent me, the comment way to cook it is with chicken and make into a stew, very delicious and precious.



材料:
1 只 走地鸡
大约 两大杯 的 东北榛蘑
1 根 葱 切段
2-3 片 姜
3-4 瓣 蒜
1 只 八角

调味:
2 大勺 料酒
2-3 大勺 酱油
1 大勺 老抽
1/2 小勺 食盐
糖 适量

Ingredients:
1 Whole organic free-range Chicken
2 cups of Dried Mushrooms
1 Scallion  Cut into 2 inches long
2-3 slices of ginger
3-4 Cloves of garlic
1 Star Anise

Seasoning:
2 tbsp of cooking wine
2-3 tbsp of dark soy sauce
1 tbsp of light soy sauce
1/2 tsp of salt 
Sugar to taste




1. 把榛蘑洗净泡温水10分钟。取出榛蘑沥干水份,泡榛蘑的水别倒了。

2. 鸡肉砍成块,汆烫后洗净沥干备用。

3. 锅里下2-3大勺的油,把姜葱蒜和八角入锅爆香后加入鸡肉炒至水份挥发。如果喜欢的话,可以这个时候加入榛蘑炒香。

4. 加入料酒、老抽、生抽、糖炒匀,倒入泡榛蘑的水没过鸡肉。加盖大火煮滚后转小火炖15分钟。

5. 如果刚刚没加入榛蘑一起炒的话,此时可加入榛蘑翻匀继续炖30分钟。

6. 出锅前按口味加点食盐调味,如果汤汁太多可以适量大火收汁。

非常下饭好吃的小鸡炖蘑菇。

1. Clean and soak the dried mushrooms for 10 minutes. Drain and keep the soaking water aside.

2. Cut chicken into pieces, blanch and wash the chicken, drain and set a side.

3. Heat 2-3 tbsp of oil in a cooking pan, add ginger, garlic, scallion and star anise in the pan and fry for 1 minute. Add chicken pieces and cook until water evaporated from the pan, you can add the mushrooms now if you wish.

4.  Add Chinese cooking wine, dark and light soy sauce, sugar into the pan, add the water from soaking mushrooms to submerge the chicken pieces, cover with lid and cook for 15 minutes.

5. If you haven't already added the mushrooms just now, you can now add the mushrooms and cook for 30 minutes until chicken become tender. Season with some salt.
