【素炸三明治】Stuffed Bread Pakora


最近因为Covid-19 冠状病毒肆虐,州长两周前就下了禁足令,好多餐厅和超市都暂时关门了。呆在家里没事,就做点想做很久的小点心。

以前在印度的时候,租住的小区门口有个小咖啡馆,这款素炸三明治是他们家的招牌点心,很多人排队买来吃,俊爹也很喜欢。

很多年没吃这款小点心了,材料家里都有,就给因在家上班一直开会的男主人做一次吧!

We have been ordered to Stay-At-Home by the authority to combat spreading of COVID-19,  since staying home means I have to make three meals a day. I decided to make a few dishes that I have been wanting to make for a long time.

This Stuffed Bread Pakora is one of them, we used to order this pakora as late afternoon snack at a small cafe near our rented apartment in Bangalore, it has been years since I tasted it.


面糊: 
1 杯 鹰嘴豆粉 (gram flour)
2 大勺 粘米粉
1/4 小勺 辣椒粉
1/4 小勺 孜然粉
1/4 小勺 芫荽粉
1/2 小勺 食盐
1/2 小勺 泡打粉
1/2 水 可 酌量增减

For the Batter: 
1 cup chickpea/gram flour
2 tbsp rice flour
1/4 tsp Red chili powder
1/4 tsp of cumin powder
1/4 tsp of Coriander powder
1/2 tsp salt
1/2 tsp of baking powder
1/2 cup water or as required

馅料:
 1 只土豆 (大约 150-180 克)煮熟去皮
 1-1 1/2 小勺 青柠/柠檬汁
 1 撮 干葫芦巴叶 (Kasuri Methi)
 1/2 小勺 孜然粉 (Jeera/Cumin)
 1/2 小勺 盐
 1/4 小勺 辣椒粉
 1/4 小勺 印度五香粉 Garam Masala

For Stuffing :
1 medium size potato (around 150-180 gm)cooked and skinned
2 tbsp Chopped Coriander
1-1 1/2 tsp Lime/Lemon Juice
1 bunch (around 1 tsp ) of Kasuri Methi (Dried Fenugreek Leaves)
1/2 tsp Jeera/Cumin
1/2 tsp Salt
1/4 tsp Chili powder
1/4 tsp Garam Masala

Other:
2-3 tbsp of Green Chutney 

其他:
2-3 大勺 薄荷沾酱




1. 把面糊里列出的材料全部混合静置10分钟。

2. 把土豆加水煮2-5-30分钟至土豆变软,去皮压碎。

3. 把香料和盐加入混匀备用。

1. Mix all ingredients listed under Batter to form a batter with pancake batter consistency. Leave it aside for 10 mins.

2. Meanwhile, work on the filling, cook the potato for 25-30 mins with water until it is fully cooked, take the potato out and wash with cold water, peel the skin and mashed the potato.

3. Add the spice powder and salt and mix well.



4.  热上小半锅的食油,取两块面包,在一块面包上抹上绿色沾酱。

5. 抹上一层土豆馅,盖上另一块面包。

6. 把三明治浸入鹰嘴豆糊,裹上一层豆糊,入锅中火炸两面至金黄色即可。

吃的时候弄上一杯香料奶茶,简直太舒服了。

4.  Heat about 2-3 inches of oil in a cooking pan. Take two slices of bread and spread about 1 tsp of green chutney over one of the bread.

5. Place a layer of potato filling over bread and top with another bread.

6. Dip the sandwich into chick pea batter, coat a layer of batter and deep fry the sandwich until golden brown in color, turn once or twice to make sure both sides are cooked.

Serve hot with hot Masala Tea.
