印式中餐【客家炒面】Hakka Noodle


During my years in India, I often encountered a question that I could not answer until much later. The question goes : "Can you teach me how to make Gobi Manchurian, the CHINESE FOOD ?". 

Yeah you heard it right, India has its own version of Chinese foods. 

And the mentioned Gobi Manchurian is often paired with this Hakka noodle, a type of vegetable fried noodles that are normally made with dried egg noodles, a combinations that I enjoyed a lot in India as it is the closest things to Oriental cuisines that I could get.

在印度的时候我经常会遇见印度朋友问到:“你能不能教我做满洲花菜呀?”。让我非常啼笑皆非!后来再遇见这样的问题,我就会说:“满洲花菜不是中国菜!不过,却是最接近中国口味的印度菜!”

满洲花菜是印度式中餐厅主打的菜肴,经常和今天做的这款“客家炒面”一起吃,也是我在印度时经常点的套餐。算是口味最接近中餐的印度美食了。


Ingredients:
2 bunch/150 g of dried egg noodles
1.5 tbsp of oil
1 tbsp of chopped garlic
2-3 Scallion (Chopped the while part and Julienne the green part)
1 carrot (Peel and julienne)
1/4 green capsicum (Juliennes)
1/4 red capsicum (Juliennes)
5-6 French bean (Juliennes) Optional
1 Egg Optional

Seasoning:
2 tbsp Soy Sauce
1 tbsp Oyster sauce
1/4 tsp of white pepper powder
1/2 tsp of sesame oil
1 tsp of Chili oil

材料:
2 束/150克 干面条
1.5 大勺 油
1 大勺  蒜末
2-3 大葱(切碎白色部分,切碎绿色部分)
1 根 胡萝卜(去皮切丝)
1/4 只 青椒(切丝)
1/4 只 红椒(切丝)
5-6 根 四季豆(切丝)可无
1 只 鸡蛋 可无

调味料:
2 大勺 酱油
1 大勺 蚝油
1/4 小勺 白胡椒粉
1/2 小勺 麻油/香油
1 小勺 辣椒油



1. Prepare all the ingredients accordingly, cut the vegetables.

2. Bring 1/2 pot of water to boil, and cook the noodle for 5 minutes, drain and rinse the noodle with cold water. Set aside.

3. Heat 2 tbsp of oil in a wok, add chopped garlic and the white part of scallion. Stir until fragrant.

4. Add the egg and stir quickly until it is scrambled. 

5. Add all the vegetables and cook for 1-2 minutes, add the noodle and stir fry at high heat for at least 2-3 minutes.

6. Add all the soy sauce and oyster sauce, mix well and continue cooking at high heat for 1-2 minutes, add pepper powder, sesame oil and chili oil, keep stirring with spatula until well mixed. Server hot.

1. 把所有材料都准备好,蔬菜切丝。

2. 烧开1/2锅的水,把面条入锅煮5分钟,捞出沥干后用凉水过一遍,沥干备用。

3. 炒锅烧热加2大勺油,加入蒜末和葱白部,炒香。

4. 加入鸡蛋并快速炒散,加入所有蔬菜炒1-2分钟,加入面条大火翻炒2-3分钟。

6. 加入酱油和蚝油调味,继续翻炒1-2分钟,加入胡椒粉、香油和辣椒油,用锅铲不断翻炒匀即可出锅。
