【药材鸡爪】Steamed Chinese Herbal Chicken Feet


I went to a Dim Sum place nearby with some friends during the Chinese New year. We ordered this herbal chicken feet and I really like it a lot. 

I try making it at home few days back and I think my version tastes better!

1 盒 鸡爪
15 克 党参
2 片 当归
4-5 片 淮山
10-12 片 玉竹
6-8 颗 红枣
1 大勺 枸杞
2 大勺 白米酒/法国郎酒

1/2 小勺 食盐
1 小勺 酱油
1 小勺 蚝油
1/2 小勺 糖
3 大勺 绍兴酒/料酒 

1 box around 1 kg of chicken feet
15 g of Codonopsis (党参)
2 slices of Angelica (当归)
4-5 slices Dried Chinese yam rhizome (淮山)
10-12 pieces Polygonatum odoratum (玉竹)
6-8 Dried red dates
1 tbsp Dried goji berries
2 tbsp Chinese rice wine/French Rum

1/2 tsp salt
1 tsp soy sauce
1 tsp oyster sauce
1/2 tsp sugar
3 tablespoons of Shaoxing wine/cooking wine

1. 把鸡爪剪去指甲后加一大勺面粉和一小勺食盐揉几分钟去除杂质,再用清水冲洗几遍,沥干备用。

2. 把腌料加入到鸡爪里混合腌制至少一个小时。

3. 把党参、当归、淮山、玉竹、红枣洗净后加入锅里和半锅水煮滚后转小火煮15分钟,把腌好的鸡爪放到锅里大火煮滚后转中火炖45-50分钟。

4. 撒入枸杞趁热淋入米酒或者法国郎酒,即可食用。喜欢汤汁浓点的可以大火收汁。

1. Cut off the nails of the chicken feet and add a large spoonful of all purpose flour and a small spoonful of salt and mix with the chicken feet, massage the chicken feet for a few minutes to remove impurities, rinse with cool water several times, drain and set aside.

2. Add the marinade to the chicken feet and marinate for at least one hour.

3. Wash the Codonopsis pilosula, angelica, Chinese yam, Polygonatum odoratum, and red dates, add them to a cooking pot with half a pot of water, bring to a rolling boil, then turn to low and cook for 15 minutes.

4. Add the marinated chicken feet into the pot and bring to a boil again, turn to medium heat to cook for 45-50 minutes.

5. Sprinkle some wolfberries and add rice wine or French Rum and serve immediately.
