孟买小吃 Pav Bhaji (Mumbai Pav Bhaji)




Pav Bhaji就字面上来翻译直接就是蔬菜和包子一起吃的意思,是印度中部孟买一带的小食。刚到印度的时候我一直以为pav (念pao)是中国包子翻译过去的,一直很好奇到底一个中国包子的名字是怎么传到印度去的呢?

后来一位孟买的朋友解释说Pav在Marathi(印度中部语文)的意思是四分之一的意思,以前在印度面包店做的小餐包一般都是四个成一块的。因为Pav Bhaji不是正餐,是小点,所以一般卖的时候就是一个小餐包,一点蔬菜沾着吃,所以就有了四分之一餐包和蔬菜(Pav Bhaji)的叫法了。

Pav Bhaji literally means sweet bread and vegetable curry, it is a fast food dish native to Maharashtrians, it is also very famous in most of the cities in india.

A very good snack over hot tea in the afternoon!



材料:
1 只 马铃薯
1/2 只 胡萝卜
1/2 杯 花菜
1/2 杯 豌豆
1/2 杯 四季豆
1 只 番茄
1 只 洋葱
两只 青辣椒
1/2 条 黄油/Butter

调味:
1 茶匙 Garam Masala
1 茶匙 姜蒜蓉
1/2 茶匙 姜黄
1 茶匙 辣椒粉
1.5 茶匙 芫荽粉
1/2 茶匙 孜然粉
1 茶匙 糖
1 茶匙 孜然
1 大勺 番茄酱
盐适量

其他:
9只素食餐包 

Ingredients: (for 4 serving)
1 medium size potato
1 medium size tomato
1 medium size Onion
1/2 carrot
1 cup Cauliflower florets
1/4 cup Green pea
1/2 cup French bean
2 Green chilies
1/2/ 4 tbsp stick Butter

Seasoning:
1 tbsp tomato paste/ketchup
1.5 tsp dhania (coriander) powder
1 tsp ginger garlic paste
1 tsp of cumin seed (Jeera)
1 tsp chili powder
1 tsp of sugar
1/2 tsp Garam Masala
1/2 tsp turmeric powder
1/2 tsp of Jeera (cummin) powder
salt to taste

9 Homemade Pav Buns



1. 把蔬菜洗干净切块,加一点盐和刚刚没过蔬菜的水高压8-10分钟,然后用用压土豆泥的smasher 把蔬菜稍微压碎.

2. 高压蔬菜的时候另外一口锅里下3 tbsp的黄油,煸炒切碎的洋葱,洋葱变色之后倒入一茶匙的姜蒜蓉和糖,然后倒入切丁的番茄和切碎的青辣椒。

3. 等番茄炒软了,看见红油之后把1茶匙Garam Masala、半茶匙姜黄、1茶匙辣椒粉、1.5 茶匙芫荽粉、半茶匙孜然粉、1茶匙孜然全加入翻炒大约一分钟,然后倒入刚刚压好的蔬菜。

4. 加盖中火煮10分钟,至稠稠的,这个时候倒入番茄酱和盐调味。

5. 做好了Bhaji,就准备Pav,就是买来的餐包,对半切开,抹上Butter在平底锅里烤香,就可以了。

1. Wash and cut all vegetables, add 1 tsp of salt and water just enough to cover the vegetable, pressure cook for 8-10 minutes. Release the pressure and mash the vegetable using potato masher, keep aside.

2. In another cooking pan, melt 3 tbsp of butter, fry chopped onion till it turned translucent, add a teaspoon of ginger garlic paste, and a teaspoon of sugar, stir for about a minute, add chopped green chilies and tomato cubes.

3. Cook until oil separated from the side of onion and tomato, add Garam Masala, turmeric powder, chili powder, dhania powder, jeera powder and jeera, fry for about 1 minute, add mashed vegetable.

4. Cover with lid and cook for about 10 minutes or until gravy thickened, add tomato paste/ketchup.

5. Prepare pav, halved the pav (sweet bun) and spread a thin layer of butter, toast it on a pan till the surface turn golden brown

Serve with onion and lime.
