Vietnamese Spicy Lemongrass Chicken

This Vietnamese Lemongrass is a must order whenever we visit our favorite Vietnamese Restaurant here in NJ.

I made this Spicy Lemongrass Paste yesterday and today it's Yummy spicy Lemongrass chicken day!

Ingredients for Spicy Lemongrass Chicken:

2 tbsp Spicy Lemongrass Paste
1-1.5 lb chicken pieces/chicken breast pieces(marinate with a pinch of black pepper powder and some salt)
1 tsp Meat Curry powder
1/2 onion, chopped
1 tbsp Soy sauce/Fish Sauce
1/2 tsp Salt
1/2 tsp Sugar/Palm Sugar

Heat up a cooking pan, and turn the heat to medium, and cook the chicken pieces WITHOUT oil, cover it if needed, until the grease started release. (BUT,If using skinless chicken/breast, you will need to add 1 tsp of oil or so to grease the pan).

When the grease released is visible, stir in the chopped onion, and cook for another minute, now add 1 tsp of Curry powder, stir well, and add 2 tbps of Spicy Lemongrass Paste, stir for another minute, add about 1/2 cup of water, salt, soy sauce/fish sauce and sugar.

Bring it to boil and when the liquid reduced to the thickness of your liking, its done!

Serve this delicious dish with some steamed Jasmine rice!

  2. Sonia,oh yes... and it goes soo well with Jasmine rice...

    You could prepare a bottle of this paste and use it for a month or so... I have a couple of other cuisine using the same paste.. you can check it out too!

  3. Echo,谢谢你的食谱!我一直都有在看你的食谱,谢谢你不吝于分享!我有一个小问题,我有试过用你说的方法去种香茅,可是我的香茅才放进水里几天,就会开始发霉(根部会变黑)。我也有天天换水。后来有几根,好像发霉没那么严重,就只是外层而已,我就把外层去掉,用potting soil种在花盆里,可是却活不起来 >_< 我没有green thumb,每次种什么都好像会死掉。是我没让它在水里待久的关系吗?根要长多长才可以种?用普通的potting soil就可以了吗?

  4. CW好,我想可能你买回来的香茅已经不新鲜了,或者你泡香茅的罐子有油迹,还是不干净。一般来说室温下,6-7天就看见根须就可以种了。


  5. 谢谢你的回复,Echo! 我的香茅是在Whole Foods 买的(想说,买比较好的,因为这里的亚洲市场卖的是干瘪瘪的,哈哈!)下次我再挑更新鲜一点的,罐子再洗干净一点试试看。我通常都只泡3根(主妇心态,怕泡不出根会浪费所以都只泡几根,哈哈!)
