Claypot Salmon Belly 三文鱼腩煲


When we first came to the States, we were amazed with the price of foods here, coming from European country makes everything in the USA look so economical. We will go to Costco and brought tonnes of fruits and vegetables and meats, I will then literally cooking up a spree!

Salmon was one of our favourite purchase, I was initially very happy with the cut, it is boneless and is very easy to clean and prepare. We stopped buying from Costco shortly after, the reason is not hard to figure. The size of everything from Costco are humongous for a family of two, it started feeling more like a burden and I hate having to throw away many unused rotten vegetables.

Coming back to the salmon, I got tired of the meaty tasteless fillet, I grew up eating whole fish and enjoyed sucking on fish bones and head, we stopped buying salmon for a long time, until one day I discovered fish belly and fish bones in Hmart. I brought a packet home and managed to turn a 7 dollar box into three different dishes! How economical is that. Not to mention I thoroughly enjoyed the bones and succulent belly!

刚从欧洲搬来美国的那会儿,觉得自己简直来到了美食天堂,超市里的物价和欧洲比起来直接就是白菜。当时很爱去Costco买肉和水果,我尤其喜欢买Costco的三文鱼,切块腌制烤鱼块,做咖喱,烤鱼都很方便也卫生。

后来渐渐地就不怎么去Costco了,两口之家买Costco的东西其实是一种压力,经常吃不完丢了也浪费。而且我也开始对口口是肉的三文鱼厌倦了,吃海鲜长大的我还是喜欢吃整鱼啊!带骨带头的鱼怎么吃起来就鲜很多呢?

后来被我在Hmart发现了三文鱼骨腩,一大盒才七美刀左右,买回来居然让我给弄出三道美食,这算不算很会持家呢?(笑)。


Ingredients:
300 gm Salmon belly, cleaned and cut into 2 inches pieces
2 spring onions cut into 2 inches in length
2-3 cloves of garlic Sliced
4-5 slices of ginger
1 tsp cornstarch  dissolved in 1/2 cup of water
3 tbsp of low gluten flour

Seasoning:
2 tsp Oyster sauce
1 tsp Light Soy sauce
1 tsp of caramelized soy sauce
1/4 tsp sugar
1/4 tsp sesame oil
1/2 cup of water

材料:
300 克 三文鱼腩  切段  加点盐和胡椒粉腌制20分钟
2 根葱
4-5 片 姜
2-3 只 蒜瓣
1 tsp 芡粉 混合1/2杯水
3 tbsp 低筋面粉

调味:
2 tsp 蚝油
1 tsp 酱油
1 tsp 晒油/黑酱油
1/4 tsp 糖
1/4 tsp 麻油
1/2 杯水



1. Cut salmon belly into pieces and marinate with some pepper powder and salt for 20 minutes. Dredge the fish pieces with some cake/low gluten flour, deep fry in a fryer until crunchy. 

2. Heat up 1 tbsp of oil in a wok, add ginger and garlic slices and stir until fragrant, add all ingredients listed under seasoning and 1/2 cup of water, bring to boil, add the fried fish's belly, add cornstarch water, bring to boil again, add the spring onion.

3. Transfer the whole content to a heated clay pot, serves hot.

Note:You can sprinkle some white pepper powder before serving.

1. 把三文鱼肚腩用一点的盐和胡椒粉腌上20分钟,沾上一层薄薄的低筋面粉,入油锅炸酥起锅沥干油备用。

2. 把姜葱蒜准备好,锅里热上1 大匙的有,把姜蒜煸炒香之后加入所有调味料和1/2杯水,煮滚之后加入鱼块翻匀,加入芡粉水,再次煮滚后加入葱段,把鱼块和酱汁倒入一口瓦煲里煮滚即可上桌。

注:如果喜欢看可以上桌前撒一点点的白胡椒粉增香。
