Low fat Pumpkin Pancake



I love pumpkin and anything made with pumpkin, so it is not unlike me to create a pumpkin version of pancake! Another weakness of mine!

Ingredients:

2 cups Whole wheat flour (I used Indian Atta)
1 tbsp Organic Brown sugar
1 tbsp baking powder
1/2 tsp ground cinnamon
1/2 tsp Salt
1 egg
1 cup organic soy milk (or milk)
1 cup cooked pumpkin cube

Others:
1 tsp butter
Maple Syrup to taste


Cook or microwaves the pumpkin cubes for 5-6 minutes, till it is soft, in a mixer/grinder, add cold soy milk, egg and other ingredients blend it into a good consistent mixture.



In a cooking pan, turn to medium heat, pour in 1/4-1/3 cup of the mixture, cover with lid for about 45 seconds, when the bubble holes form on the surface, turn the pancake to cook the other side for another 45 seconds or so, or until its golden brown in colour.



Serve with some butter and maple syrup!
