黑糯米是非常营养的杂粮,做成甜汤/糖水也特别好吃哦!
Black glutinous rice is a very nutritious wholemeal widely consume in Asia. It has a good amount of protein, carbohydrate, calcium, phosphorus, iron, vitamin B1 & B2 ect. The Chinese herbal medicine books also believe that black glutinous rice could aid in increasing blood and its circulation, it could also help in preserving or to increase "qi" or energy.
This beautiful grain is normally made into sweet dish in south east Asia. This sweet porridge is one of them!
材料: (做 4-6 份)
150 克 的 黑糯米
6-7 杯 水
100 克 的 冰糖
50 克 的 椰糖
Ingredients: (Yield 4-6)
150 gm of black glutinous rice
6-7 cups water
100 gm of rock sugar/sugar
50 gm of palm sugar optional
1. 先把黑糯米洗净泡水2个小时。泡糯米的水呈黑紫色是正常的,只要米粒不变白,就是纯正的黑糯米。
2. 泡好的黑糯米加上6-7杯水煮滚后转小火熬一个小时,间中搅拌几次避免沾底。一个小时后加入冰糖和椰糖,加盖虚焖30分钟。
3. 搅拌均匀,吃的时候加入椰奶(新鲜的最好,不然罐头椰奶也行)。

3. Drain the rice and place it in a pot with 6-7 cups of water, bring to boil and cook it at medium low heat for 1 hour. Stir a few times in between to prevent sticking to bottom.
4. Switch off the stove and season with palm/rock sugar. Cover the lid and wait for 30 minutes before serving, the porridge will become thicker and stickier, which is exactly the kind of consistency we are looking for.
5.Serve with 1-2 tsp of fresh coconut milk. (Canned coconut milk is OK, though nor preferred).
A dessert sweet, flavorful and good for health!
