Bubur Pulut Hitam (Black Glutinous Rice Dessert)

Black glutinous rice is a very nutritious wholemeal widely consume in Asia. It has good amount of protein, carbohydrate, calcium, phosphorus, iron, vitamin B1 & B2 ect. The Chinese herbal medicine books also believe that black glutinous rice could aid in increasing blood and its circulation, it could also helped in preserving or to increase "qi" or energy.

This beautiful grain is normally made into sweet dish in south east Asia. This sweet porridge is one of them!

Ingredients: (Yield 4-6)
150 gm of black glutinous rice
6-7 cups water
100 gm of rock sugar/sugar
50 gm of palm sugar   optional

Clean and soak black glutinous rice for at least 2 hours, it is absolutely alright if the water turned blackish a little. As long as the rice doesn't turn into white grain -- a sure sign of bad luck, you have got fake black glutinous rice there!

The genuine black glutinous rice never changes color even after hours of soaking.

(the amount of glutinous rice shown in this picture is double of the recipe recorded, as I was making this dessert for our Christmas party).

Drain the rice and place it in a pot with 6-7 cups of water, bring to boil and cook it at medium low heat for 1 hour. Stir a few times in between to prevent sticking to bottom.

Switch off the stove and season with sugar. Cover the lid and wait for 30 minutes, the porridge will become thicker and stickier, which is exactly the kind of consistency we are looking for.

Serve with 1-2 tsp of fresh coconut milk. (Canned coconut milk is OK, though nor preferred).

A dessert sweet, flavorful and good for health!
