浥饭是用豆腐干、虾米、香菇、肉等食材,连同糯米饭合煮而成,口味咸香,非常美味。
It is the folk customs of southern Fujian, to serve this Eik P'ng/ Oil rice at the full moon celebration for new born in the family. The Eik P'ng also called "oil rice" or "fragrant oil rice", it carries the meaning and wishes that the baby will grow up healthily.
材料:
1.5 杯 /300 克 糯米
0.5 杯 / 100 克 大米/茉莉香米
1 小块 五花肉 切小片
1-2 块 豆腐干 切小丁
3-4 朵 香菇 泡发切片
15 克/一小把 虾米 泡热水
3-4 只 红葱头 切片
1 杯 烤/炸花生米
调味:
2 大勺 酱油
1 大勺 黑酱油/珍珠油/老抽
1/2 小勺 胡椒粉
1/4 小勺 五香粉
食盐 适量
Ingredients:
1.5 cups / 300 g glutinous rice
0.5 cup / 100 g white rice/jasmine rice
1 small piece of pork belly slice into small pieces
1-2 pieces of dried tofu, cut into small cubes
3-4 shiitake mushrooms, soaked and sliced
15g/a small handful dried shrimp soaked in hot water
3-4 shallots sliced
1 cup roasted peanuts
Seasoning:
2 tbsp soy sauce
1 tbsp dark soy sauce
1/2 tsp pepper
1/4 tsp five spice powder
Salt to taste
1. 把大米和糯米洗净沥干备用,不必泡。
2. 其他材料依次准备好,红葱头、五花肉、香菇切片,豆腐干切丁,虾米洗净泡热水10分钟,泡虾米的水可以留起来待会儿焖饭时加入。
3. 锅里热油,先把红葱头炸酥,取出备用。
4. 在同一口锅里把五花肉入锅煸炒出油,取出备用。
5. 把香菇虾米和豆腐干下锅煸炒香之后,加入五花肉再煸炒一下。可以稍微加点食盐和胡椒粉调点味。
1. Wash and drain the rice and glutinous rice and set aside.
2. Prepare the ingredients accordingly, sliced shallots, pork belly, and shiitake mushrooms. Wash the dried shrimps and soak them in hot water for 10 minutes. You can save the water from soaking the dried shrimps and use it to cook the rice later.
3. Heat some oil in a cooking pan, fry the shallots until golden brown, take out and set aside.
4. In the same pan, stir-fry the pork belly until oil releases, take it out and set aside.
5. Stir-fry the shiitake mushrooms, dried shrimps and tofu until fragrant with the oil released from pork belly, then add the pork belly back and continue to cook for 2-3 minutes. You can add a little salt and pepper to taste.
6. 把炒好的食材取出一半备用,把红葱酥和沥干的米倒入锅里和剩下的一半食材拌匀翻炒几分钟。
7. 倒入刚刚没过米的水,把所有调味料加入拌匀,可以稍微加点盐调咸淡。煮滚后加盖小火焖煮大约20-25分钟。
注:喜欢吃软饭的可以水稍微多2-3勺,水份可以按自己的口味添加。
8. 这个时候可以把花生米炒熟放凉,我是用气炸锅烤的。
9. 米饭焖好熄火打开盖子拌匀后再加盖虚焖5分钟,然后把备用的食材和花生米倒入拌匀即可食用。
6. Take out half of the stir-fried ingredients and set aside, add the crispy shallots and drained rice into the pan, mix well with the remaining half of the ingredients and stir-fry for a few minutes.
7. Pour in enough water that submerged the rice, it should be slight more or level with the rice. Mix well and add a little salt to adjust the taste. After bringing it to boil, cover and simmer the rice for about 20-25 minutes.
Note: If you like your rice to be softer, you can add 2-3 tablespoons of extra water.
8. Meanwhile, you can fry the peanuts and let cool. I made mine using an air fryer.
9. After the rice is cooked, turn off the heat, open the lid and mix the rice , cover with lid again and wait for 5 minutes, add the fried ingredients we set aside and peanuts back to the rice, mix well and serve.
