Kangkung Belachan is a very typical Malaysian vegetable dish, It is something every Malaysian can't get enough with, it requires only fresh water spinach (Kangkung), some good old Sambal Belachan, a little more oil and quick stir on wok at high heat.
I had it with some nasi lemak and it was so fulfilling!
Ingredients:
1 bunch/400-500 gm of Kangkung (water spinach)(Use only the young leaves and stem)
3 tbsp or more of Sambal Belachan
1 tbsp Minced Garlic
2 tbsp Chopped dried shrimp (soaked and chopped)
Salt to taste
1 red chili (slice)
1. Heat up 2-3 tbsp of oil, if you do not mind the grease, add 1 more tbsp, it will taste better. stir fry minced garlic and chopped dried shrimp until fragrant.
3. Add Sambal belachan, and stir well, add water spinach and give it a quick stir, season with salt and garnish with some red chili.
This looks sooo delicious... wish there was a vegetarian version to it!
