这个柠檬鸡块是我娘家过年必做的一道菜,小孩子们很喜欢,吃着也很清爽开胃。
We make this lemon chicken every year during our Chinese New Year reunion dinner back home. It is a family recipes and the kids loved it. You could also use Chicken wings to make this, equally tasty.
材料:
350-400克 鸡腿/Thigh 肉去骨切麻将大
少许芝麻 (烤香)
1 小勺 切碎的柠檬皮 (削皮刀削出来的薄片切碎)
鸡肉腌料:
2 小勺 蛋清
1 大勺 料酒
1/2 小勺 盐
1 撮 胡椒粉
几滴 麻油
沾粉:
1/4 杯 粘米粉
1 小勺 木薯粉/芡粉
1 小勺 面粉
酱汁:
3 大勺 柠檬汁
10-12 颗 冰糖
350-400 gm Chicken Thigh (Cut into bite size)
Roasted sesame for garnishing
1 tsp Lemon Zest
For marination:
2 tsp Egg white
1 tbsp Cooking Wine
1/2 tsp Salt
1 pinch of pepper
Few Drops of Sesame oil
For Dredging: (Mix well)
1/4 Cup Rice Flour
1 tsp Tapioca Flour or corn Starch
1 tsp All purpose flour (Wheat Flour)
For sauce:
3 tbsp Lemon Juice
10-12 pieces of Rock Sugar (1 1/2 tbsp)
1. 把鸡肉块用所有的腌料腌20-30分钟,然后把沾粉拌入,拌勻後入锅中火炸成金黄色。
注:如果要鸡块表皮更酥脆,可以先把所有鸡块炸好,然后再把锅里油加热,二次入锅再炸一遍,鸡块就会外酥里嫩。
2. 柠檬削皮切碎,然后挤出柠檬汁备用。
3. 锅里下一点点的油,把冰糖(我混了点红糖)下锅,倒入柠檬汁和切碎的柠檬皮一起煮至冰糖溶化,糖浆开始呈泡泡状时,倒入鸡块快速翻匀,起锅前撒上芝麻。
1. Marinate chicken chicken with all ingredients listed under For marination for 20-30 minutes.
2. Add the mixed flour into chicken and mix well to coat chicken well with flour before deep frying in oil until golden in color.
Note:For crispier outer layer of chicken, first deep fry the chicken to about 90 percent cooked, take it out, and heat up oil to bring the temperature up, re-fry the chicken, it will be juicy inside and crispy outside.
3. In a cooking pan, heat up about 1 tbsp of oil, add rock sugar (I added a little of brown sugar), lemon zest and lemon juice, keep stirring until the sugar melted, when the mixture thickened and become bubbly, add chicken pieces, stir well until all the chicken pieces coated with the sauce.
Sprinkle some roasted sesame before serving.
