We make this lemon chicken every year during our Chinese New Year reunion dinner back home. It is a family recipes and the kids loved it. You could also use Chicken wings to make this, equally tasty.
350-400 gm Chicken Thigh (Cut into bite size)
Roasted sesame for garnishing
1 tsp Lemon Zest
2 tsp Egg white
1 tbsp Cooking Wine
1/2 tsp Salt
1 pinch of pepper
Few Drops of Sesame oil
For Dredging: (Mix well)
1/4 Cup Rice Flour
1 tsp Tapioca Flour or corn Starch
1 tsp All purpose flour (Wheat Flour)
3 tbsp Lemon Juice
10-12 pieces of rock sugar （1 1/2 tbsp）
1. Marinate chicken chicken with all ingredients listed under For marination for 20-30 minutes.
2. Add the mixed flour into chicken and mix well to coat chicken well with flour before deep frying in oil until golden in color.
Note：For crispier outer layer of chicken, first deep fry the chicken to about 90 percent cooked, take it out, and heat up oil to bring the temperature up, re-fry the chicken, it will be juicy inside and crispy outside.
3. In a cooking pan, heat up about 1 tbsp of oil, add rock sugar (I added a little of brown sugar), lemon zest and lemon juice, keep stirring until the sugar melted, when the mixture thickened and become bubbly, add chicken pieces, stir well until all the chicken pieces coated with the sauce.
Sprinkle some roasted sesame before serving.
