Mumbai Tawa Pulao 【孟买平底锅炒饭】



This pulao is made in the same Tawa/frying pan that the hawker prepared the world famous snack-- Pav Bhaji in Mumbai, with the same spices/masala. It has the fragrant of Pav Bhaji yet is so much more filling.

I made this for hubby's classmate gathering, it turned out so well and they finished it all!



“Tawa”在印度语里是”平底锅“的意思,所以此款炒饭全名的意思就是平底锅炒饭。它的名字来源是孟买街边小贩在制作有名的小吃“Pav Bhaji”(蔬菜和煎面包)的平底锅上用相同的香料和蔬菜加米饭炒制而成的。它即带有Pav Bhaji的香气,又比小吃更饱肚。渐渐地名气也和Pav Bhaji不相上下了。

俊爸前几天有几个大学同学从瑞士来探望我们,他约上了几个在美的老同学聚餐。我就做了这款炒饭和几道家常菜。炒饭很是受欢迎,一大锅的吃得一点都不留哦!



Ingredients:(Serves 4)
1  Cup Basmati rice boiled into 1/2 pot of rice
1 Cup chopped vegetables (peas,green pepper,sweet corn,carrot)
2 medium size tomatoes (chopped)
1/2 onion (chopped)
2-3 green chilies (minced)
1/4 cup/ 1/2 stick of butter
1 tsp Ginger Garlic Paste

Seasoning:
2 tsp Pav Bhaji Masala
1.5 tsp Coriander/Dhania Powder
1/2 tsp Turmeric/Haldi Powder
1/2 tsp Chili Powder
1 tsp Salt to taste


材料:(4人份)
1 杯 Basmati 香米 (印度长香米)煮成的白米饭 (大约小半锅)
1 杯 蔬菜丁 (青豆,青椒,玉米,胡萝卜切丁)
2 只 中型 番茄 (切丁)
1/2 只 中型洋葱 切丁
2-3 只 朝天椒 切碎
1/4 杯/ 1/2 条 的黄油
1 tsp 姜蒜蓉

调味:
2 tsp Pav Bhaji Masala
1.5 tsp 芫荽粉 (Coriander Powder)
1/2 tsp 姜黄粉 (Turmeric Powder)
1/2 tsp 辣椒粉 (Chili Powder)
1 tsp 或 适量 食盐 



1. Clean and soaked rice for 10 minutes, cook accordingly to make 1/2 pot of rice. Let cool and set aside.

2. Melt butter in a pan and add minced green chilies and ginger garlic paste,stir for few seconds, add chopped onion and cook until it turned translucent.

3. Turn heat to low, add all seasoning and cook for few seconds, bring the heat up and add chopped tomatoes, cook until tomatoes become soft.

4. Add chopped vegetables and continue cooking for few seconds, add cooked rice, turn well and cook until all vegetables are cooked.


1. 先把白米淘洗干净泡水10分钟,加适量水煮成白米饭。
2. 把黄油入锅融化,加入切碎的朝天椒和姜蒜蓉煸炒几秒钟,加入洋葱丁煸炒软,
3. 关小火,加入所有调味料稍微煸炒,后转大火,加入番茄丁,煸炒软。
4. 加入蔬菜丁,煸炒几秒钟之后加入米饭,拌炒匀即可。

Note:Serve with a little butter if you do not mind the added calories, it will taste even better!
注:如果喜欢,不怕卡路里略高的话。可以食用时加上一小块黄油拌拌再吃,会更香。
