Thai Basil Stir Fry Tofu 【塔香五香豆干】


The Thai Basil I planted this year have been flowering non-stop, so I have no choice but to keep cutting the tip to keep it growing.

That also means to keep using thai basil in my cooking! This time I use my favourite cooking ingredient -- tofu! The tofu I choose for this recipe is the smoked hard tofu, the texture is chewy and somewhat meat-liked, good substitute for meat indeed.

Ingredients:
3-4 hard tofu (slice into long stick)
2 cup thai basil leaves
2-3 thai chilli(or green chilli)
2-3 cloves of garlic (slice)

Seasoning:
1-2 tsp Fish sauce/nam pla (or to taste)
1 tsp Oyster sauce
A pinch of sugar
A pinch of pepper powder (Optional)

材料:
3-4 片 豆干 (切长条状)
2 杯 九层塔
2-3 只 泰国尖椒(或青椒,不嗜辣可以减半也可以不加)
2-3 瓣 蒜瓣 (切片)
 
调味:
1-2 小勺 鱼露 (根据买的鱼露的咸味调整)或酱油代替
1 小勺 蚝油
糖少许
胡椒粉 少许 可无

 


Clean and prepare ingredients accordingly.

In a cooking pan, add 1 tbsp of oil, stir fry garlic and chilli till fragrance, add tofu pieces and stir well.

Add 1 cup of water or chicken stock, season with oyster sauce, fish sauce and sugar, cover with lid and cook for 5 minutes at medium heat.

When the water reduce to desired thickness (very less gravy), add Thai basil leaves, switch off the stove, stir well till the basil leaves become wilted. Seasoned with some pepper powder before serving.

首先把材料都准备好。

锅里热上一大匙油,把蒜和辣椒爆香,然后加入豆干稍微翻炒。

倒入一杯水/高汤,加入蚝油,糖和鱼露调味,加盖焖煮5分钟或至水份减少。

起锅之前倒入九层塔,稍微翻匀,撒上胡椒面提香就好了。

简单易做又好吃的塔香豆干就好了。
