Banana Mixed Nuts Cake 干果香蕉蛋糕



The banana I bought during sales in Walmart are getting too ripe, and I got tired of making milkshake out of it, so I came up with the idea to bake a banana cake.

I have chosen this recipe for it call for lesser butter, thus lesser calories, and yet equally tasty!

前阵子Walmart的香蕉打折,我老公头脑一发热,买了两大串回家,结果一星期不到,就都熟透了。我只好想尽办法消灭香蕉。

这个蛋糕是打发鸡蛋的做法,和一般的Banana Bread有点不一样,Butter用得也比较少,所以稍微低卡健康。更轻盈更好吃!



Ingredients:
3 ripe large banana  or  1 1/2 cups of mashed banana
2 1/4 cups All-purpose flour
1 cup Brown sugar
3 eggs
2/3 cup mixed nuts (chopped)
1/4 cup Black and white sesame seeds (mixed)
1/4 cup low fat milk
1/2 cup  or 1 stick of Butter
1 tsp Vanilla Essence
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp salt (if using salted butter, omit this or reduced to half)

材料:
3根大香蕉压成泥 或 1 1/2 杯的香蕉泥
2 1/4 cups 中筋面粉 (All-purpose flour)
1 cup 红糖
3 只鸡蛋
2/3 cup mixed nuts (混合干果,或者核桃,花生,腰果混合)切碎
1/4 cup 黑白芝麻 (混合)
1/4 cup 牛奶
1/2 cup 或 1 根 Butter
1 tsp 香草精 (Vanilla Essence)
2 tsp 泡打粉 (Baking powder)
1 tsp 小苏打 (Baking soda)
1/2 tsp 盐 (如果用带咸味的Butter可以减半)





1. Mashed banana and mix with vanilla essence. Sift flour and blend well with salt, baking soda and baking powder.

2. In a Stand Mixer/Hand Mixer beat butter(room temperature)and sugar until smooth or a little like ice cream in texture.

3. Add one egg at a time, beat until fluffy, and add another egg, repeat for all the 3 eggs.

4. Mix in the flour mix slowly in 3 batches, add milk and mashed banana in between, continue beating at high speed until the batter become fluffy.

5. Mix in the chopped nuts and sesames.

1. 香蕉压成泥,加入香草精。面粉筛过混入盐,泡打粉,和小苏打粉备用。

2. 用搅拌机把红糖和黄油 Butter(室温)打成冰淇淋状。

3. 加入一只蛋,再打成冰激凌状,再加入另一只蛋,这样重复三次。

4. 把混了泡打粉和小苏打的中筋面粉分成三次慢慢加入搅拌,间中加入牛奶和香蕉泥,一直搅拌到完全混合,有点蓬松的状态为止。

5. 最后加入切碎的干果和芝麻,拌匀。




6. Pre-heat oven to 360F (180C).

7. Lightly butter and flour a 9 inches baking pan, transfer batter to the pan.

8. Bake for 45-50 minutes, test with a bamboo stick, if the stick come out clean, it is done. Cool completely before serving.

6. 烤箱预热 360F (180C)。

7. 烤盘抹上黄油,稍微撒一点干面防粘。倒入面糊,入烤箱烤40-45分钟(根据烤箱性能增减5分钟。)这个食谱可做九寸烤盘一盘,我分成两盆八寸烤盘烤。

8. 烤好直接出炉,冷却切块就可以吃了。
