Spicy Roasted Chicken

I have tried a few Roast chicken recipes, they are all good. Somehow I always felt something is missing, so I decided to come up with my own recipe.

I did, and loving the result! Its spicy, its juicy!!

1 Organic Chicken
2 Large potato(or carrots)
1 Onion
3 Spring Onion
1 lime/lemon

For Marinates:
1 tbsp Garlic Salt
1 tbsp Coriander powder
1 tsp Chilli Powder
1 tsp Cummin Powder
1/2 tsp Turmeric Powder
1/4 tsp Sichuan Pepper Powder
1 1/2 tsp Salt

1 tsp Cummin Seeds
1 tsp Chilli Powder

Blend together all spices under "For Marinates" and rub it evenly on the chicken, included inside of the stomach, when it is done, place the chicken in the zip lock bag, marinate the chicken in the refrigerator for 2-3 days. turn a few times in between.

Peel and cut potato into pieces, cut the onion into big pieces, cut spring onion into 2 inches long, spread all of them on a baking pan.

Roll lime/lemon hard on table top to release its fragrance, use a fork to poke couple of times on the lime/lemon, tuck the lime into chicken's stomach.

Truss the chicken, first tuck the wings under the body, then wrap a butcher twine around the drumsticks, and tie the drumsticks together with a secure knot.

Put the chicken on top of potatoes and onion. Preheat oven to 350F (180C).

Before baking, sprinkle cumin seeds and chilli powder evenly on the chicken. Breast on top, bake for 40 minutes, turn the other side and bake for another 30 minutes.

Increase temperature to 400F (200 C), brush oil and juice at the bottom of baking pan all over chicken, bake for another 20 minutes.

It smells heavenly already!

When it is done, let the chicken sit in the oven for 5 minutes before serving.

Its Juicy!!
