I finally got to harvest my Aubergine/Eggplant today, together with tomato and chilli yesterday, it will be a pity if I do not make this delicious mashed eggplant dish!
1/2 cup frozen/fresh peas
1 medium size tomato
2 green chillies
1 tsp cummin seeds
1/2 tsp chilli powder
1 tsp ginger garlic paste
1/2 tsp Garam Masala
1/4 tsp turmeric powder
1/2 tsb salt or to taste
Brush a layer of cooking oil all over the surface of eggplant. Roast it on gas burner over medium low flame, keep turning the eggplant to make sure all parts roasted evenly, till the skin of eggplant became charred.
Let the eggplant cold down a little, removed charred skin, cut the stem and lightly mash the eggplant with a fork, set aside.
Blend together tomato, chillies and onion into a smooth paste, in a cooking pan, heat up 2 tbsp of cooking oil, cook blended tomato paste until oil separated at the edge.
Add cumin seeds, ginger garlic paste, chilli powder, turmeric powder and salt, stir well and cook for another 2-3 minutes.
Now add the mashed eggplant, and mix well, cook for few more minutes, add frozen peas, mix well and cook for another 2 minutes before serving.
It goes well with chapati/roti or naan!
