Baigan Ka Bharta (Mashed Roasted Aubergine/Eggplant) 【香辣茄子泥】


I finally got to harvest my Aubergine/Eggplant today, together with tomato and chili harvested yesterday. it will be a pity if I do not make this delicious mashed eggplant dish!

院子里的大茄子终于可以收成了,加上昨天收成的西红柿和辣椒,不做这个香辣茄子泥太可惜啦!
喜欢吃茄子的朋友可以试试这个北印度很有名的茄子泥,是配馕和面饼的好东西。

Ingredients:
1 eggplant/Aubergine
1/2 cup frozen/fresh peas
1/2 onion
1 medium size tomato
2 green chillies
1 tsp cummin seeds
1/2 tsp chilli powder
1 tsp ginger garlic paste
1/2 tsp Garam Masala
1/4 tsp turmeric powder
1/2 tsb salt or to taste

材料:
1 个大茄子

1/2 杯豌豆
1/2 只洋葱 
1 只中型番茄
2 只小辣椒
1 tsp 孜然
1/2 tsp 辣椒粉 
1 tsp 姜蒜蓉
1/2 tsp Garam Masala
1/4 tsp 黄姜粉
1/2 tsb 盐 或适量

1. Brush a layer of cooking oil all over the surface of eggplant. Roast it on the gas burner over medium low flame, keep turning the eggplant to make sure all parts roasted evenly, till the skin of eggplant became charred.

2. Let the eggplant cooled down, removed charred skin and remove the stem. Lightly mash the eggplant with a fork, set aside.

1.把大茄子洗干净擦干后抹上一层薄薄的油。在炉子上小火烤茄子,不断翻转至每个部位都烤着, 茄子表面变成炭黑的模样茄子肉变软即可。

2. 把茄子稍微冷却后剥去茄子皮,切去瓜蒂。拿个叉子把茄子稍微压成泥,备用。



3. Blend together the tomato, chilies and onion into a smooth paste. 

4. Heat 2-3 tbsp of cooking oil in a cooking pan, Add cumin seeds, ginger garlic paste, chili powder, turmeric powder and salt, stir well and cook for 45 seconds.

5. Add blended tomato paste and continue cooking until the oil separated at the edge.

6. Add the mashed eggplant and mix well, cook for a few more minutes before adding frozen peas, mix well and cook for few a more minutes before serving.

3. 把番茄、辣椒和洋葱搅拌成糊状. 

4. 锅里下2-3大匙油,把孜然、姜蒜蓉、辣椒粉、Garam Masala 、黄姜粉和盐翻炒45秒后倒入番茄和洋葱糊炒至泛出红油。

5. 倒入茄子泥翻炒几分钟后加入豌豆翻匀,再煮大约2分钟就好了。




It goes well with chapati/roti or naan!
烙上几张饼,好吃的香辣茄子泥就好啦!
