素食好主意【香辣土豆泥】Aloo Bhaji (Spicy Mashed Potato)

这是一个可以完全不起炊就做得好的菜,可以用来做三文治,也可以做配菜。

夏天不想在厨房流汗做菜的时候可以考虑试试做这个喔!

This is a simple dish that could be prepared by microwave, its a good dish to make during hot summer without having to sweat in front of hot stove!


材料:
2-3只 土豆 
一把 香菜/芫荽 (切碎)
1 大勺 柠檬/青柠汁
盐 适量 (大约 1/2 小勺)
 
红油:
2-3 大勺 油
1/2 小勺 孜然 (Cummin Seed)
1/2 小勺 芥菜籽 (Mustard Seed)
1/2 小勺 辣椒粉 (Chilli Powder) Optional
1/4 小勺 黄姜粉 (Turmeric Powder)
1 点点 阿魏胶粉 (Asafoetida Powder)
1/2 小勺 姜蒜蓉 (Ginger Garlic Paste)
1 小勺 青辣椒碎  

Ingredients:
2-3 Medium size potato
2 tbsp chopped coriander
1 tbsp Lime/lemon juice
Salt to taste (Around 1/2 tsp)

For Tempering:
2-3 tbsp Oil
1/2 tsp Cummin Seed
1/2 tsp Mustard Seed
1/2 tsp Chilli Powder Optional
1/4 tsp Turmeric Powder
A pinch of Asafoetida Powder (Hing)
1/2 tsp Ginger Garlic Paste
1 tsp Chopped Green Chilli


土豆洗干净,用刀在表皮轻轻划两刀,加点水,加盖,微波炉里转5分钟/或根据微波炉的功率,转至土豆熟为止。

取出冷水泡一下,就很容易剥去皮了。用一个叉稍微压压,不必压得很烂。 把压好得土豆泥再微波 1分钟加热。

取出土豆泥,加入柠檬汁,盐,姜黄粉拌匀。

在一口小碗里,加入油,姜蒜蓉,阿魏胶,辣椒碎,孜然和芥菜籽,入微波炉里转 1 分钟 30秒,取出,搅拌,然后再微波 30秒,取出倒入土豆泥里,拌匀,加入切碎的香菜,拌匀,就好了。

Clean and make a shallow cross cut on potatoes, put the potatoes in a microwavable bowl, sprinkle some water over it. Cover with lid, microwave for 5 minutes. Soak boiled potatoes in a bowl of cold water, this will help remove the potato skin easily.

Lightly mash the potato, it does not have to be very mushy, microwave it again for 1 minute, take it out, add lime/lemon juice, salt and turmeric powder, mix well.

In a small microwavable bowl, add oil, ginger garlic paste, asafoetida, chopped chilli, cumin and mustard seeds, microwave for 1 min 30 seconds. Remove from microwave, stir the content, and microwave for another 30 seconds.

Now pour the tempering over to potato, add chopped coriander leaves, mix well. And its ready.

Simple and tasty Spicy mashed potato.
