Dan Dan Noodle (Spicy Sichuan Noodles)



N and I both loved this Spicy noodles, we will surely order one whenever we visited Sichuan restaurant.

I made a box of Sichuan style spicy minced meat this morning and used it for this Dan Dan noodle, it is so yummy and satisfying!



Ingredients:(Serves 2-3 people)
2 bunches of thin dried noodles (You can use fresh ones if you prefered)
4-5 tbsp Sichuan Style Spicy Minced Meat
2-3 tbsp Sichuan Yibin Preserved Sprouts
A bunch of sweet pea tips (I used spinach)
A little bit of chopped Scallion
A little bit of roasted sesame
1 1/2 tbsp Homemade Red Oil

Seasoning/Sauce:
1 tbsp Light Soy Sauce
2 tsp Black Vinegar
1 tsp Sesame paste/Tahini  Optional
1 tsp Minced Garlic
a little sugar



1. Make Sichuan Spicy Minced Meat following the recipe here. Place all ingredients under seasoning/sauces in a bowl.

2. Heat up a little oil in a pan, stir fry the Yibin Preserved Sprouts for 1-2 minutes, it will enhance the taste of it.

3. Bring half a pot of water to boil, cook noodles according to package instructions. Once the noodles are cooked, blanch the vegetables. Place the cooked noodles in the bowl with sauces, add 2 tbsp of hot water/broth into the bowl.

4. Place cooked vegetables, minced meat and pickled sprouts over noodles. Drizzle homemade red oil with the chilies over noodles. Add more or less according to the level of spiciness you like.

Sprinkle some roasted sesame and chopped scallion, mix the noodle well before serving.
